Lead Cook (Tournant) at Holeman and Finch Public House

We are looking for a Lead Cook to join the culinary brigade at our midtown restaurant. Holeman and Finch is a gastropub, presenting artisanal twists on classic dishes with a whole animal, whole vegetable philosophy. With a robust wine list and original, inspired cocktails, there's something for everybody at every time of day. The charming space is filled with cozy booths and over 150 pieces of thoughtfully curated art. In every corner, the restaurant nods to the vibrant arts scene found in Midtown.

 

What is the Job?

 

As a lead cook, you will work closely with the back of house team to ensure the consistency and deliciousness of all menu items, following our carefully tailored recipes each and every time. You will assist in setting up and maintaining stations, preparing food, and working in tandem with the rest of the culinary team. You will be responsible for ensuring food quality and timeliness, constantly communicating ticket times and inventory with your Chefs. Open availability to AM and PM shifts is essential.

 

What are the responsibilities?

  • Maintain a working knowledge of all recipes, steak temperatures, and production times
  • Preparing, portioning, and garnishing foods to recipe, observing and assisting cooks to do the same
  • Set up and maintain a clean, organized station according to brand standards, ensuring that all cooking stations are adequately stocked with the necessary ingredients and cooking equipment
  • Compliance with sanitation regulations and safety standards, maintaining equipment cleanliness and HAACP policies
  • Work as a team player, helping your fellow team with guest interactions and bar duties to contribute to a positive working environment
  • Able to prioritize multiple tasks and openly communicate with your manager and fellow service team about next steps
  • Consistent adherence to the uniform policy
  • Reports for duty on time and manages one’s shift, communicating with the management team when leaving their station for breaks or family meal

What are the requirements?

  • Must be 18 years of age or older
  • 3 year(s) of culinary experience with 1 year in a supervisory/lead position preferred
  • Food safety knowledge
  • Advanced knife skills
  • Able to move and/or lift heavier product of up to 50 pounds
  • Able to stand for long periods of time; occasionally kneel, bend, and crouch as required to reach items at varying height levels
  • Able to work in a fast-paced environment calmly and effectively
