The Concept
The 380-seat restaurant is dedicated to the foods of our region—from Gulf coast seafood to Hill Country barbecue to Rio Grande Valley-inspired botana platters. Located on the northern edge of the Pearl neighborhood, this restaurant will occupy a historic building that has been home to many storied establishments.

Position/Objective Summary
The General Manager is to embody the cultural and operational spirit of the Restaurant. The GM will assure operation, experiential and financial excellence in creating the premier dining experience in Texas. Leads the team on key planning issues and business operations decisions; is the key revenue driver of the restaurant, responsible for daily communication across many teams (accounting, operations, T&C and executive management)
Essential Functions
- Lead the managerial team in both Hospitality and Culinary to ensure all team members are effectively executing their delegated sections of operations and offering the best guest experience.
- Maximize and balance the business volume among three unique venues: Main house – restaurant and small meetings; Rock House – Catering venue operated with traditional Banquet service; and Outside patio space with private bar area
- Ensure all teams are properly executing operational excellence and working cohesively in tandem with one another. The General Manager will oversee the monitoring and reporting of departmental performance.
- Set the course for bringing the vision of the restaurant to life every day, in the menu, service, in programming, in partnerships in associates’ experiences and culture.
- Oversee development plans, trainings, and culture crafting initiatives presented by People and Culture.
- Provide financial oversight and monitoring and prepare and present financial and operations reports to senior management.
- Identify profits and losses and operating within the parameters of budgets.
- Drives local Marketing initiatives and ensuring we are operating with high quality and within the parameters of safe service of both food and alcohol.
- Prime cost control being a shared accountability with Executive Chef and other leaders.
- Timely payroll approval.
- Assisting and directing kitchen staff in meal preparation, creation, plating and delivery
- Scheduling to labor goals and managing all staffing logistics.
- Responsible for ensuring that inventory and ordering is done with integrity at the store level.

Required Experience
- 7 - 10 or more years of high-volume experience as a senior leader (General Manager or equivalent)
- Experience with relevant cuisine (Mexican, Barbeque, Innovative Sea Food)
- Ability to speak Spanish is a plus
Physical Requirements
- Must be able to work on site at the Carriqui restaurant and attend meetings at Hotel Emma and around Pearl
- May include prolonged periods standing and working long hours as operation demands
- Must be able to lift up to 50 pounds at times
- Ability to perform repetitive movements over long periods of time
