JOB OVERVIEW: Responsible for the daily service of various coffees, teas, drinks and menu items. Serve all guest and patrons in a quick, efficient, and friendly manner. Responsible for daily maintenance of the equipment, coffee machine, espresso machine and refrigeration and must understand the financial aspect of those items. Responsible for a cash bank. Must have general cashiering experience and be able to operate the hotel’s POS system and accurately account for all cash, credit card and room charge sales. Complete required daily report and recording of sales. Requisition material and stock items; does inventory. Act as a utility person at the bar and assists the bartender/cashier as required in keeping supplies and equipment ready, services guests, etc. Knowledgeable in County liquor regulations. Relieve bartender/cashier. Keep the bar, storeroom and work area clean and organized. Maintain the proper par stock of garnishes, juices glasses, etc. Prepare garnishes, mixes and juices for drinks. Friendly, articulate, well-groomed, have solid written and verbal communication skills, well organized and have a willingness to learn. Service-minded and innovative who can help us continue to offer our high standard of quality service.
ESSENTIAL JOB DUTIES:
Receive and properly store requisitions to include liquor, beer and wine and report any discrepancies in requisitions or inventory.
Prepare, restock and set-up the bar and coffee cart for daily service; pick-up fresh food from kitchen.
Responsible for the daily maintenance and cleaning of the equipment, coffee and espresso machine, refrigeration, bar storage area, equipment, countertop, etc.
Report any equipment in need of repair or maintenance.
Welcome & greet guests in a friendly manner, personalizing the service.
Take food and beverage orders in a complimentary means as to increase guest experience.
Prepare beverages and other items efficiently and serves guests quickly and according to standards.
Follow County, Federal regulations and hotel policies in serving alcoholic beverages.
Relieve and perform the duties of a bartender/cashier when required.
Assist bartender in welcoming guests, taking beverage orders, mixing and serving drinks.
Perform all side duties to hotel standards to include opening and closing duties.
Knowledgeable on menus and hotel beverages to include wine and able to make recommendations to pair with menu items ordered as an upsell to increase the guests.
Insure food items are refrigerated or stored properly.
Receive payment for items sold and follows hotel’s cash handling and general cashiering procedures; responsible for a cash bank.
Turn in receipts and paperwork with daily sales reports.
Recognize and appropriately respond to irate patrons: contact manager on potential problems.
Consistently perform tasks as specified on sequence of service standards and SOPs.
Perform other related duties as assigned or required.
Other Duties:
Recommend the resort’s restaurants and facilities to guests.
Keep work area clean and orderly; pick-up trash, wipe spills, etc.
Knowledgeable of hotel and Big Island history.
Cut garnishes for drinks.
Make mixes/juices for drinks
Complete requisitions for stock items; does inventory.
Working Conditions:
Mauna Kea Market.
Outdoor venue with various weather conditions
Work Hours:
Able to work shift and days determined by the restaurant manager.
Able to work more than 40 hours per week when needed.
Equipment Use:
Proficient in the use of the resort’s POS system.
Coffee makers, tea brewers, cappuccino machine, blender, glass chiller, cc machine, refrigerator, glass washer, ice machine, espresso machine and wine key.
Bartender tools; knife, bar spoon, muddler, shaker, citrus wedge squeezer, ice pick, wine opener, bottle opener, can puncher, bottle spouts.
Hand-truck, service carts and supply wagons.
Mental and Physical Demands:
Able to multi-task and organize/prioritize workload.
Able to manage stressful & challenging situations when dealing with guests.
Able to stand, walk, bend, and reach during most of shift.
Reach in/out of cold refrigerators, ice machine.
Hands in/out of water with dishwashing soap when assisting behind the bar.
Lift and carry up to and over 50 lbs.
Push and pull up to and over 50 lbs.
Able to train new employees.
Communication Demands:
Must be able to communicate effectively in English to employees, managers and guests.
Minimum Qualification Requirements:
Candidate must be able to pass assessments to include behavioral, food knowledge, and beverage/coffee.
Passionate about food and beverage and possess an overwhelming desire to please our guests.
Six months food & beverage related work experience preferred.
Dept. of Health TB clearance.
Able to multi-task.
At least 18 years of age to serve alcoholic beverages.
Must be engaging, friendly and smiling, sharing the “aloha” spirit.
Current recipient of Blue Card, from liquor commission or receive within 30 days of hire.
Well groomed meeting hotels standards.
