Job Summary:
To direct and supervise all dietary department functions and personnel. Directs meal production and service. Dietary Manager meets regularly with a qualified Dietician, to ensure diet orders are carried out appropriately. Reports to Administrator.
Responsibilities and Duties:
1. In the absence of full-time Dietician, directs and supervises all dietary department functions and personnel.
2. Responsible for shift scheduling, assignment of meal preparation and cleaning duties of kitchen and serving kitchen, and instruction of dietary personnel.
3. Responsible for evaluating work performance of dietary personnel and giving corrective action as necessary.
4. Maintains, revises and establishes dietary standards, policies and procedures.
5. Orders and inspects food and supplies within a budget and manages inventory, storage and rotation.
6. Creates, prepares and adjusts menus to give to Activities department for distribution.
7. Receives and implements diet changes from nursing department.
8. Maintains Kardex and checks meal trays regularly to ensure residents with special diets or restrictions are served accordingly.
9. Covers shifts within the department as necessary.
10. Upon admission, quarterly and PRN visits and interviews residents to obtain meal preferences, evaluate food service, quality & quantity of meals, and makes necessary revisions.
11. Plans and assists in preparation of special meals for parties, banquets, etc.
12. Coordinates with nursing to provide meals that are outside of normal meal times i.e. appointments, outings, etc.
13. Conducts dietary related staff inservices as necessary.
14. Attends Quality Assurance meetings and provides related information.
15. Other duties as assigned.
Qualifications
Qualifications:
1. Must have three years of successful cooking experience in an institution, preferably a nursing home, hospital or school lunchroom, with at least one year of the three in a supervisory capacity.
2. Must have successful completion of a Dietary Manager’s course from a vocational or community college or be currently enrolled.
3. Must have and maintain a Certified Dietary Manager’s license, with associated continuing education.
4. Must be able to read, write and speak the English language.
5. Must maintain a current food handler’s license.
6. Must be able to lift/push/pull over forty pounds.
Salary : $30
