Hyeholde Restaurant is seeking an experienced Banquet Chef Hyeholde Restaurant and Round Room is a unique dining and entertainment venue in operation for over 85 years located in Moon Township, PA, minutes from Pittsburgh. The restaurant sits high on a hill and overlooks four acres of flower gardens, a chefs’ garden, and bee hives. We are a fine dining restaurant with farm-to-table menus. We use the finest quality ingredients available, and update our menus to reflect the flavors of each season. We support our local farmers and purveyors. We are looking for a Banquet chef who is a strong leader with the ability to maintain the highest standards of food quality, cost control, and consistency for the production of parties in our Round Room Event space at Hyeholde. ROLE AND RESPONSIBILITIES : Assure and maintain food quality standards including consistency, presentation, and creation of decorative food displays. Banquet Chef will work closely with the Executive Chef with menu planning, flavor profile, presentation, portioning, execution, and concept. All duties as Banquet Chef are overseen by the Executive Chef. Responsible for overseeing, maintaining, and scheduling banquet staff. Responsible for execution of events. Working with Private Event Manager in the day-to-day operations and overseeing Banquet staff before and during the party. Follows directives from the Executive Chef and acts as a liaison between Front of House, Private Events Manager, and the Executive Chef. Oversee food production for all stations, track food costs as requested, and ensure that employees keep waste to a minimum. Thorough knowledge of food products, standard recipes, and proper preparation. Ensure all items are prepared properly and timely for events. Ensures team members adhere to Hyeholde guidelines as stated in the team member training manual and employee handbook. Promotes a cooperative work climate, maximizing productivity and morale. Making people feel welcome and comfortable, treat every guest, employee, and vendor respectfully. Implement a kitchen cleaning schedule and a detailed plan for how to keep the kitchen well-kept and spotless. Oversees kitchen staff safety and sanitation. Must follow HACCP guidelines, upholding company food safety, food handling, and sanitation requirements to ensure the health and safety of our guests and staff. Perform and oversee inventory and ordering, identify and communicate needs to Executive Chef. Accept direction and feedback from others, and provide the same to the team. REQUIREMENTS : Associates or Bachelor’s degree in culinary arts preferred, but not required. Minimum 3-5 years of related experience required, preferably in an upscale food and beverage operation with a proven track record of accomplishments. Excellent written / digital and verbal interpersonal and communication skills. Strong computer (Word, Excel, etc.). Sets high standards by complying with all departmental rules, policies, and procedures. Clean work habits, attention to detail, and thorough service standards are required. Must be able to multitask in a high-volume environment while always appearing calm and collected. Must possess a professional demeanor with the ability to interact with all types of team members. Proven ability to lead a staff and positively influence employee behavior. Prior experience with inventories, purchasing, and development. Must be able to work flexible hours including nights, weekends, and holidays as required. Must have the ability to stand and walk at a steady pace for periods of up to 8 hours or more. Must have the ability to frequently lift and or move up to 50 pounds. Must have completed and maintained certification in Serv-Safe.
