Assist the Camp Chef to
- Manage day-to-day kitchen operations and kitchen staff including the event assistant and coffee attendant
- Oversee the ordering of food, kitchen supplies, and all other items required to provide adequate food service
- Collaborate with kitchen staff for execution of daily food service, quality, technique, portion and presentation and food cost control with monthly expense reports
- Standardize production recipes to ensure consistent quality
- Collaborate with Camp Manager and/or Assistant Camp Manager on all aspects of event planning and coordination of food service for every hunt visit.
- Report monthly on food expenses and other kitchen issues as they may arise
- Responsible for other marketing tasks as they become necessary to execute or as directed by the Camp Manager and/or Camp Assistant Manager
- Advanced experience with culinary preparations and cooking
- Some computer knowledge of excel, word and publisher software programs to manage expenses, memos, reports, and recipe presentations for approval
- Knowledge of planning, coordinating, and executing quality dishes
- Fluent in writing and speaking English
- Excellent communication, presentation, and interpersonal skills
- Able to manage a kitchen staff to accomplish quality food services
- Positive attitude and able to manage or lead a team
- Must be flexible to work evenings and occasional weekends as needed
- Must be agile enough to lift and carry kitchen equipment not exceeding 30 lbs.
- At least 2 years working in a restaurant or with a culinary team. Restaurant experience a plus.
- Food Handlers Certificate
- Successful execution of all events and daily tasks
- Achieve and maintain event quality food presentations and meet goals and expenses in control
- Ability to effectively interface with colleagues, company staff, and customers
