A. Responsible for deep understanding of animal protein, animal protein processing and animal protein applications. Must be able to provide in-depth technical support within the animal protein space and have deep fundamental knowledge of animal protein chemistry, microbiology, food safety and impact of various processes on finished products. Familiarity with controlling animal protein oxidation through oxidative and antioxidative strategies isa key area. The position will utilize their experience to identify and advance new initiatives, technologies, and work plans for delivering customer solutions both internal and external. The position requires a hands-on approach with working with lab equipment and pilot plant equipment necessary for creating animal protein applications.
Dimension of Function
A. Manage, lead and/or participate in all food industry meat programs (20%)
B. Be the subject matter expert and key communicator on animal protein including biochemistry, flavor interactions, functional ingredient solutions, and Broth and soluble product designed products (20%)
C. Build a strong network of key industry and academic partners and technical solution providers (20%)
D. Collaborate with commercialization, operations and supplier teams to ensure an efficient translation of product formulas to production facilities (20%)
E. Must be able to interface and communicate technical findings to key customers and internal global partners (10%)
F. Direct the development and execution of both short and long-term R&D for animal protein application projects (10%)
Other Functions:
A: Experience with experimental design, statistical data analysis and interpretation of results.
B: Is able and willing to take on project leadership role for long-term projects

Knowledge and Experience Requirements:
• A strong technical background is required with a minimum of an B.S. degree in Food Science, Poultry Science or related, combined with strong technical experience in meat science application. Masters /PhD preferred. •
Skills & Abilities:
Excellent communication, interpersonal skills, and computer literacy are required. A solid knowledge of flavor production, product applications, market trends, sales function/role, understanding of laboratory equipment, and a broad customer base are also factors for success.

- 7-10 years research applications experience with knowledge of the USDA / FDA experience a plus.
- Excellent knowledge of processed meat applications; challenges and solutions.
- This position requires a detailed oriented individual with the ability to resolve complex technical problems related to flavors and functional ingredients within food systems. The ability to integrate analytical and sensory data is a plus. Must possess ability to explain simple technical content.
- In depth knowledge of poultry applications
Skills & Abilities:

- Willingness to travel nationally and internationally.
- Hands on application development using laboratory, pilot plant and plant equipment.
- Strong oral and written English communications skills are essential.
- Ability to troubleshoot in a production or pilot plan environment.
- Bonafide Occupational Qualifier- must be willing and able to taste experimental food products and smell flavors.
- Knowledge of SAP, Regulatory databases (Leffingwell and Allured),USDA/FDA regulations.
- Proficiency in MS Word, MS Excel, MS PowerPoint for reporting
- Safety training for chemical laboratory, RTK Training, Hazardous waste Management, DOT Samples
- Office, laboratory/pilot plant/kitchen setting.
