Operations Manager – Catering and Concession Operations

Position Overview
We are seeking an experienced Operations Manager with deep expertise in the catering industry to lead and optimize our operations. This critical role requires a comprehensive understanding of quoting, menu planning, kitchen coordination, and flawless event execution. The ideal candidate will demonstrate strong leadership, operational acumen, and the ability to manage complex logistics with precision in a fast-paced, high-stakes environment.
Reporting to senior leadership, you will oversee all administrative functions, including the recruitment and management of event-based personnel, while collaborating closely with our parent company’s operations team to ensure seamless production and execution. Key Responsibilities
Sales & Quoting
- Manage the quoting and proposal process, ensuring accuracy, profitability, and alignment with client expectations.
- Partner with the sales team to develop strategic pricing models that balance cost efficiency with premium service delivery.
- Analyze event performance and prepare detailed profit and loss (P&L) reports for each event to inform strategic decisions.
Kitchen & Production
- Collaborate with the culinary team to design menus, control costs, and ensure efficient preparation and execution.
- Enforce strict compliance with food safety, storage, and handling regulations.
- Oversee procurement processes and cultivate vendor relationships to secure high-quality ingredients while maintaining cost controls.
Event Execution & Logistics
- Develop and implement comprehensive event operation plans, including load-in schedules, service flow, and staffing requirements.
- Supervise on-site event execution, ensuring impeccable timing, food presentation, and guest experiences that exceed expectations.
- Address last-minute logistical challenges with agility and creativity to maintain flawless execution under pressure.
- Manage staffing and scheduling to ensure adequate coverage and peak performance during events.
Operational Efficiency & Leadership
- Establish and implement best practices to streamline operations and enhance overall efficiency.
- Oversee inventory management to prevent shortages or overstocking, optimizing resource utilization.
- Manage fleet and transportation logistics to ensure timely, organized deliveries and event setups.
- Recruit, train, and develop a high-performing catering operations team, fostering a culture of excellence and accountability.
Qualifications & Experience
- Bachelor’s degree in hospitality management, business administration, or a related field (preferred).
- Minimum of 5 years of experience in catering operations, with a thorough understanding of both front-of-house and back-of-house functions.
- Experience in event operations within a concession or large-scale catering environment is highly desirable.
- Demonstrated expertise in managing budgets, quotes, and cost controls to drive profitability.
- Proven leadership skills with experience managing kitchen teams, event staff, and complex logistics.
- In-depth knowledge of event logistics, from planning and coordination to execution.
- Strong understanding of health, safety, and sanitation regulations in food service operations.
- Exceptional problem-solving abilities and the capacity to adapt quickly under pressure.
- Outstanding organizational, communication, and interpersonal skills.
- Proficiency with catering-specific point-of-sale (POS) systems, customer relationship management (CRM) tools, and scheduling software is a plus.
