Clean pans, pots, dishes, and other elements used in the kitchen or restaurant Operate the dishwashing machine or wash dishes by hand Maintain a clean work environment Obtain a Food Handler Card approved by the County Scrape, sort and stack dirty dishes before loading them into the dishwashing machine Unload clean dishes after sanitizing hands, putting dishes in appropriate storage areas Transfer dishes and silverware from the dish area to the service lines
