Job Overview
Provide direct management in the F & B Department and support staff including cocktailers, bartenders, bar backs, kitchen and deli workers. Manage the delivery of goods and service included in the beverage, kitchen and deli operations to ensure a level of services consistent with guests’ demands and company expectations. Train and orient every new hire to deliver the level of customer service required to develop and encourage repeat customers. Consistently achieve a balance between expenses including staffing levels and sales to maximize profits by efficiently managing expenses. Represent the interests of the department and the company at all times with a goal of maintaining the highest level of teamwork amongst your peers and subordinates. Ten (10) or more years of recent and related hospitality or F & B experience, including five (5) years of managerial/supervisory experience. Previous point of sale management, purchasing, and analysis experience required.
Applicants must have a Colorado Support Gaming License, with the ability to acquire a Colorado Key Gaming License.
Duties
Provide direct management of (F & B) operations and support staff, including cocktailers, bartenders, bar backs, kitchen and deli workers.
Manage the operations to ensure quality services to customers and employees.
Manage the Profit and Loss according to acceptable standards and expectations including attention to reasonable food and labor costs in association with department goals and objectives.
Ensure that all staff wear and maintain all uniforms and costumes properly.
Ensure that employees are informed of company and departmental policies.
Attend and participate in casino departmental management meetings and provide clarification and guidance regarding various F & B issues, goals and objectives. Make presentations on F & B issues as requested or required.
Communicate, as directed, with vendors F & B materials, food, supplies and equipment. Maintain professional contacts with other companies and industry professionals regarding F & B issues.
Manage staff to anticipate, reduce, or eliminate complaints from customers.
Assist, as directed, with the monthly inventory reconciliation of all food and beverages.
Manage staff in the development of various reports to measure and track F & B operations.
Alert manager of any concerns regarding the quality, selection and variety of all beverages.
Assist with preparation and controlling department budget.
Develop and maintain a positive relationship with both Guests and other Team Members.
Flexible workweek with possible additional hours required.
Responsible for ensuring that all Team Members maintain a clean and safe work environment and comply with safety procedures, including use of required safety equipment, identifying unsafe practices or conditions, and informing their supervisor or the Safety Committee of the unsafe conditions.
Responsible for ensuring that all Team Members follow security policies and procedures and reporting all violations. Perform duties in compliance with the Colorado Limited Gaming Act.
Perform other job-related duties as directed.
Manage a staff of employees in the casinos.
Responsible for the overall direction, coordination, and evaluation of these employees.
Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws.
Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Demonstrated hospitality or F & B management experience, preferably within a gaming environment.
Demonstrated experience managing employees in F & B operations with a focus on bar/beverage services.
Demonstrated experience performing within specific deadlines or under pressure.
Demonstrated experience problem solving, organizing, and prioritizing work.
Demonstrated working knowledge of cooking and bar operations.
Ten (10) or more years of recent and related hospitality or F & B experience, including five (5) years of managerial/supervisory experience. Previous purchasing experience is desirable. Previous experience with computer (point of sales) systems.
Ability to read and comprehend simple instructions, short correspondence, and memos.
Ability to write simple correspondence.
Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.
These language skills must be executed in English.
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, and decimals.
Ability to calculate figures and amounts such as discounts, interest, commissions, and proportions.
Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
Ability to deal with problems involving a few particular variables in common situations.
Ability to organize and prioritize work.
Valid Colorado Driver’s License and safe driving record required.
Colorado Gaming Support License is required, with the ability to acquire a Colorado Key Gaming License.
