The Lead Porter is responsible for overseeing the porter team, ensuring the cleanliness and organization of the restaurant, and maintaining sanitation standards. This role supports kitchen and FOH operations by managing waste disposal, dishwashing, storage, and equipment maintenance while assisting with deliveries and inventory organization.
Key Responsibilities:
Sanitation & Cleaning:
- Supervise and assist the porter team in maintaining a clean and sanitary kitchen, dish area, and storage spaces.
- Ensure all surfaces, floors, and equipment are properly cleaned and sanitized according to health department regulations.
- Monitor and manage the proper disposal of waste, recycling, and composting.
Team Leadership & Training:
- Lead, train, and motivate porters to ensure efficiency and compliance with cleanliness and safety standards.
- Assign daily cleaning and maintenance tasks to the porter team.
Dishwashing & Equipment Maintenance:
- Oversee the dishwashing process, ensuring that all kitchenware and utensils are properly cleaned and stored.
- Maintain and troubleshoot dishwashing machines and report any issues to management.
- Ensure proper usage and storage of cleaning chemicals and equipment.
Inventory & Deliveries:
- Assist in receiving and organizing deliveries, checking for accuracy and quality.
- Maintain proper storage and labeling of kitchen supplies, dry goods, and perishables.
- Communicate any inventory shortages or equipment issues to management.
Health & Safety Compliance:
- Ensure compliance with food safety and OSHA regulations.
- Conduct regular checks to ensure proper food handling and storage.
- Support kitchen staff by keeping workstations clean and stocked.
Qualifications:
- Prior experience as a porter, dishwasher, or kitchen steward in a restaurant or hospitality setting.
- Leadership experience preferred.
- Ability to lift up to 50 lbs and stand for extended periods.
- Knowledge of basic cleaning chemicals and food safety procedures.
- Strong organizational and communication skills.
- Ability to work evenings, weekends, and holidays as needed.
Work Environment:
- Fast-paced restaurant environment with exposure to hot surfaces, cleaning chemicals, and occasional heavy lifting.
