JOB DESCRIPTION
POSITION TITLE: STEWARD
REPORTS TO: OPERATIONS MANAGER / FLOOR MANAGER
POSITION SUMMARY
The Steward is responsible for ensuring the cleanliness, organization, and maintenance of the property both front of house and back of house while supporting smooth daily operations. This role plays a vital part in creating a positive guest experience by maintaining a clean and well-stocked environment in both the kitchen and dining areas as well as all vendor areas. Duties include setting up and cleaning dining spaces, maintaining kitchen sanitation, and assisting staff with operational needs. This proactive and physical team member is also responsible for the pickup and transportation of trash for all outlets. They are expected to always keep a clean and organized trash room, and report to J&H management any inconsistent or unacceptable practices by the vendors. They are to remove grease from fryers, used grease transportation, and clean up minor grease spills. Responsible to remove and dispose of all trash in the common dining area, vendor stalls, and bathrooms.
PRIMARY JOB DUTIES
- Arrive on time in uniform and ready to work as scheduled, including overnight, weekends, and holidays.
- Maintain cleanliness and organization throughout the property, including dining areas, kitchen, bathrooms, storage spaces, and vendor spaces.
- Assist the service team before, during, and after service.
- Handle all duties with a professional and service-oriented attitude.
- Reporting accidents or violations of food safety codes and procedures.
- Adhere to all Health Department requirements.
- Adhere to all work rules, procedures, and policies established by the company.
- Any other duties as assigned by the company in order to operate the business most efficiently.
FRONT OF HOUSE DUTIES
- Ensure tables and common areas are clean, reset, and properly stocked with silverware, glassware, and napkins.
- Clear dirty plates, utensils, and glasses from tables and transport them to designated cleaning areas.
- Clean tabletops, chairs, and high-touch surfaces regularly.
- Maintain a clean and presentable dining area, including regular checks and cleaning of the patio.
- Hose down the patio surface and water the plants.
- Support service staff by refilling water glasses, restocking supplies, and addressing guest needs promptly.
- Monitor and clean restrooms as needed, ensuring they remain guest-ready at all times.
- Handle minor spills, broken items, and trash promptly and safely.
- Provide courteous service to our guests and be cordial to all team members.
- Must have basic knowledge of all vendor areas.
BACK OF HOUSE DUTIES
- Operate dishwashing equipment to clean and sanitize dishes, glassware, utensils, and cookware.
- Clean and sanitize all kitchen surfaces, equipment, and floors.
- Unload, organize, and store deliveries in refrigerators, freezers, and storage areas.
- Handle grease removal from fryers and clean grease spills.
- Break down cardboard boxes and dispose of trash appropriately.
- Ensure trash rooms, elevators, and hallways are clean, deodorized, and presentable.
- Maintain inventory of cleaning supplies and request restocking when necessary.
- Wash, sanitize, and restock all bar tools, glassware, and mats.
- The Steward will work closely at times with the maintenance team.
- Notify managers about unsafe conditions or concerning the need for repairs or maintenance.
- Ensure to remove grease from fryers, used grease transportation, and clean up minor grease spills.
Physical Requirements:
- Ability to stand and exert well-paced mobility for entire shift.
- Ability to physically handle knives, pots, mirrors, or other display items as well as grasp, lift, hold, and carry same from shelves and otherwise transport up to 50 pounds to every area of the kitchen.
- Proper usage and handling of various kitchen machinery to include slicers, chopper, grinders, mixers, and other kitchen related equipment.
- Ability to physically self-demonstrate culinary techniques, i.e., safety and sanitation practices.
- Ability to bend, stoop, squat, carry, push and lift up to 50 lbs. on a regular and continuing basis; must be able to stretch to fulfill cleaning/inspection tasks.
- Must be able to exert a well-paced ability to maneuver between functions occurring simultaneously.
- Must be able to push and pull carts and equipment weighing up to 250 lbs. regularly.
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability, and visual acuity.
- Talking and hearing occur continuously in the process of communicating with guests, supervisors, and co-workers.
- Requires manual dexterity to use and operate all necessary equipment.
Minimum Qualifications:
- Minimal work experience, preferably in high-volume hotels or restaurants.
- Must be able to work without close supervision.
- Strong problem-solving and communication skills.
- Ability to observe safety and security procedures and to comply with policies
- Exceptional time management skills.
- Flexible and long hours are sometimes required.
- Ability to work flexible schedules, including overnight, weekends, and holidays.
- Associates may be required to work varying schedules to reflect the business needs of the restaurant.
- Must work well independently and as part of a team.
