The Sushi Chef is the pacesetter of our restaurants; rolling, slicing, plating and finishing each dish following our traditional and innovative recipes. Overall Responsibilities
- Delivers the highest level of customer service; coordinates with kitchen staff to ensure timely delivery and preparation of food items.
- Consistently displays maturity and professionalism to all guest requests, and confidently explains food, pairing, preparation and recipes as needed.
Essential Functions
- Continually read, anticipate, and fulfill guest needs when working at the Sushi Bar area
- Receives guest orders, and ensures accuracy in relaying it to the kitchen as needed for non-sushi or accompanying items.
- Prepares sushi, rolls, salads and other menu items.
- Prepares a variety of seafood, meat, and other items as requested.
- Comfortable making use of a variety of kitchen equipment (not limited to broilers, ovens, grills, and fryers).
- Knowledgeable and compliant with food portioning, cooking methods, quality standards, kitchen recipes, policy and procedures.
- Adheres with compliance on proper food presentation and garnishment.
- Handles, stores, labels, and rotates food in accordance with public health safety, state and local requirements.
- Maintains work area, kitchen, cooking, prep, sushi counter, cases, equipment, knives, and food storage areas clean, sanitary, and organized. Reports any issues to the manager.
- Uses knives, hand tools, utensils and equipment to portion, cut, slice, julienne, whip, beat, chill, freeze, maintain or otherwise produce food for the dining room and sushi bar.
- Presents a neat and clean appearance and is courteous to all guests.
- Stays current with menu, offerings, and descriptions as menu and offerings are updated.
- Comply with attendance rules and be available to work on a regular basis.
- Ability to maintain a positive and professional demeanor at all times.
- Executes and maintain quality and consistent service with full adherence to standards; acts with a sense of urgency, is friendly, professional, and engaged.
- Performs other duties as required and/or assigned by management.

Supervisory Responsibility:
- This position does not supervise any employees, nor is responsible for making decisions as they relate to the overall purpose of the business. Does coach and mentor other employees as assigned for training purposes.
