Job Summary
The Food and Beverage Manager assists the Director in overseeing all food and beverage operations, ensuring both profitability and a high level of service for club members and guests. This role involves providing strategic leadership in staff training, development, and ongoing performance evaluations, ensuring alignment with the club's mission, core values, and goals.
The manager is responsible for controlling labor and operating costs through effective planning, budgeting, purchasing, and inventory control, while focusing on innovative cost-saving and revenue-generating strategies.
Additionally, the manager builds strong relationships with both regular and new club members through personalized service, effective marketing, and ensuring the highest quality product offerings. They work closely with the Director to design appealing menus, wine lists, and amenities that provide exceptional value.
Clear communication with staff and other departments is crucial for seamless operations, and regular participation in operational meetings ensures coordination across the club. Flexibility is required, as the position involves working various shifts, including mornings, afternoons, weekends, and holidays.
Responsibilities
Key responsibilities include, but are not limited to, the following:
- Oversee service in dining areas during breakfast, lunch, dinner, and events, ensuring smooth operations.
- Manage recruitment, selection, orientation, training, coaching, and disciplinary actions for all food and beverage team members.
- Lead daily line-ups and team meetings to communicate essential club and service information, addressing any service concerns with the Director of Food and Beverage.
- Ensure the consistent implementation of all food and beverage department policies and procedures.
- Stay updated on industry trends and take necessary actions to maintain competitive and profitable operations.
- Oversee the appearance, maintenance, and cleanliness of all food and beverage equipment and facilities.
- Monitor safety, sanitation, energy management, and preventive maintenance standards, ensuring compliance and communicating safety topics to staff for awareness.
- Ensure adherence to accident and emergency procedures and policies.
- Administer physical inventory for beverage, glassware, silverware, linens, and other supplies.
- Ensure compliance with local liquor laws and health and sanitation regulations in all service areas.
- Monitor the quality of service and products consistently.
- Provide the Director of Food and Beverage with reports on employee hours, schedules, pay rates, job changes, tip pools, etc.
- Attend weekly BEO meetings and ensure that Daily Sales Reports and gratuity spreadsheets are completed accurately at the close of each business day.
- Monitor and manage labor costs, payroll, and other operational expenses.
- Review potential menus with the Director of Food and Beverage, Executive Chef, and Bar Manager, ensuring all relevant information (BEOs, flyers, and approved menus) is supplied to the communications department weekly. Maintain the Member Event Spreadsheet.
- Accurately create menu cards and product buttons in Nexus for all locations, menu changes, meal periods, and events.
- Evaluate the popularity of past menu items, assess seasonal ingredient and wine availability, anticipate food and beverage consumption, and estimate ingredient costs while minimizing waste. Approve orders with suppliers and monitor product quality.
- Manage F&B supplies by meeting with sales representatives, negotiating prices and contracts, creating a preferred supplier list, and reviewing usage reports to identify and correct any discrepancies.
- Handle member-related charge disputes, refunds, and service adjustments.
- Perform other duties as assigned, both planned and unplanned.
Qualifications
- A Bachelor's degree in Hospitality and/or Culinary Management is preferred.
- A minimum of 3 years of managerial experience in the Food & Beverage and Hospitality industry, ideally within a resort or hotel setting, or a combination of education, training, and experience that demonstrates the required knowledge, skills, and abilities.
- Food Handling Manager Certification is preferred.
- CPR/AED certification is required.
- Experience with Nexus or other Point of Sale (POS) systems.
- In-depth knowledge of food and beverage items, preparation methods, and service styles.
- Strong leadership skills with the ability to inspire and motivate a team.
- Ability to interact with guests and employees in a friendly, attentive, courteous, and service-focused manner.
- Excellent verbal and written communication skills, with the ability to engage effectively with employees and guests at all levels.
- Proficiency in speaking, reading, writing, and understanding the primary language(s) used in the workplace.
- Willingness to work rotating shifts, weekends, and holidays.
- Flexibility to schedule vacations during the off-season months.
Work Environment
