Description
Job Purpose: Operate and maintain a sanitary and clean dishwashing room, machine, and related equipment in order to produce sterilized dishes, cooking containers, utensils, and related restaurant and food service items.
Essential Functions:
- Load, run and unload dish washing machine.
- Keep the dish machine clean and report any functional and mechanical problems immediately.
- Monitor dish machine water temperature to ensure sanitary wash cycle.
- Wash pots, pans and trays and store all tableware and kitchenware.
- Keep dish room clean and organized.
- Transfer supplies and equipment between storage and work areas.
- Washes and peels vegetables as needed.
- Maintain adequate levels of clean tableware for dining room and kitchen.
- Bag and haul kitchen trash and garbage and places it in designed containers.
- Maintain adequate levels of dish detergents and cleaning supplies.
- Clean food preparation and production areas as required.
- Performs other duties and projects as required by management.
Physical Requirements:
- Walking, or standing for long periods of time; occasional bending, squatting, kneeling, stooping; good finger dexterity and feeling.
- Be able to safely lift dish racks and stacks of dishes weighing up to 40 pounds.
- Be able to work in hot, wet, humid, and loud environment for long periods of time.
- Frequent lifting (up to 40 lbs)
- Occasional lifting (up to 75 lbs)
- Be physically able to reach, bend, and stoop.
Working Conditions
- Typical of that in a busy casino with heavy cigarette smoke accompanied with a variety of competing noises and communications.
- Flexible hours (weekends, nights, holidays)
Minimum Qualifications for Consideration
- Be able to reach, bend, stoop and frequently lift to 40 pounds.
- Be able to work in a standing position for long periods of time (up to 5 hours).
- Must be able to communicate clearly with managers and kitchen personnel.
- Knowledge of food, air borne and unsanitary cleaning cloth microbes, germs, and bacteria.
- Knowledge of Public Health prescribed hand-washing techniques.
- Knowledge of the duties of other positions similar in nature to fill in when necessary.
- Current Food Handlers License.
- Ability to work any shifts, start time, weekends, and holidays.
- Documents that establish both Identity and Employment Eligibility.
Kickapoo Tribal Gaming License.
