Position Overview:
The primary responsibility of the Dining Services Assistant Manager is to assist the Dining Services Manager with the overall operation of the Dining Services Department. The Dining Services Assistant Manager (DSAM) will oversee and develop front/back of house teams, ensuring strong customer service, training, and staff retention. The DSAM will manage under the direction of the Dining Services Manager; staff scheduling, inventory, vendor relations, food prep, sanitation, and menu development. The DSAM will ensure proper food safety, portion control, and quality standards while maintaining budgets, billing, and handling special dietary needs. All duties will be performed in compliance with federal, state and county regulations.
Essential Job Functions:
- Hire, supervise, and develop dining team members; including completion of onboarding and annual competencies; and staff engagement and retention.
- Schedule dining team members to ensure adequate coverage at all times, and approve timecards each pay period.
- Ensure staff are adequately oriented and trained in dining services processes and procedures.
- Monitor inventory and order supplies in a timely fashion operating within the allotted budget.
- Actively work with food vendors on procurement and production of foods.
- In conjunction with the Dining Services Manager and Dietician, develop menus following each venue’s needs, requirements, and requests.
- Oversee food portion control and avoid wasting food or supplies.
- Monitor and follow up on cleanliness and sanitation.
- Oversee food preparation and ensure that area is clean and sanitized; follow sanitation practices as described in the Hazard Analysis Critical Control Point (HACCP).
- Perform audits on all cleaning logs on a regular basis.
- Review and ensure that adequate supplies are maintained to perform daily tasks.
- Maintain and code billing records on a consistent basis.
- Check and record temperatures of food to ensure that it is served at correct temperatures.
- Assist in assessing and implementing residents’ special dietary requirements and requests.
- Assist with other requests such as ordering and preparing food for special events
- Oversee the preparation of food in accordance with recipes and diet cards.
- Assign food preparation duties to dining staff and ensure food is ready and served or delivered at the proper time.
- May be required to perform any and all dining services duties as needed.
Qualifications and Experience:
- Must be eighteen (18) years of age
- Prefer one or more years of culinary training or equivalent experience
- Prefer one or more years of experience managing a food service operation
- Prefer prior experience working in healthcare setting or a retirement community
- Prefer ServSafe certificate or willing to achieve a certificate
- Prefer professional certification as CDM (Certified Dietary Manager)
- Must be able to work some weekends and holidays as required
Physical Requirements:
Medium Work – Exerting 20 to 50 pounds of force occasionally, and/or 10 to 25 pounds of force frequently and/or greater than negligible up to 10 pounds of force constantly.
