Key Responsibilities:
- Hands-On Cooking & Culinary Excellence:
- Actively prepare and cook breakfast, lunch, and dinner items in a fast-paced corporate kitchen environment.
- Execute authentic Korean and Japanese dishes with precision, ensuring each plate meets our high standards for quality and presentation.
- Special Events & Off-Premises Catering:
- Participate in the planning and execution of off-premises catering events.
- Develop and adapt menus that showcase Korean and Japanese culinary specialties, providing a unique dining experience at special events.
- Menu Development & Recipe Innovation:
- Collaborate with the Executive Chef in developing new menu items and refining existing recipes, with a focus on Korean and Japanese flavors.
- Bring creative ideas to the table for seasonal and event-specific dishes, maintaining cultural authenticity while innovating presentation.
- Quality & Safety:
- Maintain strict adherence to food safety, sanitation, and hygiene standards throughout all cooking processes.
- Ensure every dish leaving the kitchen reflects the true essence of Korean and Japanese culinary traditions while meeting our company’s quality standards.
- Team Collaboration:
- Work closely with kitchen staff, offering hands-on guidance and support during food preparation.
- Contribute to a collaborative team environment by sharing specialized knowledge and fostering a positive work culture.
- Inventory & Kitchen Organization:
- Assist with managing kitchen inventory and ordering supplies, ensuring the availability of specialty ingredients required for Korean and Japanese dishes.
Required Skills & Qualifications:
- Strong proficiency in traditional and modern Korean and Japanese cooking techniques, including:
- Korean: Gochujang & doenjang-based sauces, fermentation, grilling (gogigui), banchan preparation, jjigae, guk, and high-end banquet dishes.
- Japanese: Sushi & sashimi preparation, kaiseki-style plating, dashi-based broths, tempura techniques, yakitori, and premium ingredient handling.
- Mastery of knife skills, butchering, and ingredient preparation for seafood, meats, and vegetables.
- Experience with high-quality ingredients, such as Wagyu beef, Hanwoo, Uni, Hokkaido scallops, etc.
- Minimum 5 years of hands-on experience as a Sous Chef or Senior Chef de Partie in a high-end restaurant, corporate kitchen, or luxury hotel.
- Proven track record of cooking for high-profile clientele and executing meals for VIP guests.
- Strong ability to manage time efficiently in a high-volume, high-pressure kitchen.
- Experience in off-premises catering for fine-dining events and upscale corporate functions.
- Culinary degree from an accredited institution (preferred, but equivalent experience accepted).
- Food Safety Certification (ServSafe or HACCP).
- Additional Japanese/Korean cuisine certifications (e.g., Sushi Certification) are a plus.
