The Butcher at KYU plays an imperative role in ensuring that the kitchen can efficiently and consistently execute the menu. The Butcher is knowledgeable in protein fabrication, proper protein and seafood treatment, storage, and relevant technical processes, and is comfortable working collaboratively with other kitchen staff. Butchers at KYU take ownership of processing and caring for all proteins, managing their stations, and assisting in executing recipes according to restaurant standards and specifications.
Responsibilities:
- Preparing proteins, seafood items, and relevant recipes related to protein preparation.
- Proper and hygienic fabrication of proteins and seafood.
- Appropriate storage and care of all proteins and seafood.
- Following instructions provided by the Chef Team.
- Ensuring that food preparation and storage areas meet health and safety standards.
- Maintaining inventory of all proteins in-house and supplies.
- Collaborating with kitchen staff to properly prepare protein and menu items.
- Setting up and stocking the kitchen with all necessary supplies.
- Assisting prep and line cooks in service as needed.
- Producing menu items in cooperation with the kitchen team.
- Keeping the station clean, organized, and efficient.
- Rotating inventory correctly.
- Ensuring that all nutrition and sanitation standards are followed.
- Monitoring and reporting inventory needs to the Sous Chef.
Skills and Qualifications:
- High school diploma or equivalent qualification.
- Certificate in Culinary Arts or related experience.
- Minimum of 2 years of experience in a similar role.
- In-depth knowledge of restaurant practices and cooking methods.
- Excellent communication and organizational skills.
- Strong multitasking abilities.
- Ability to work cooperatively and efficiently as part of a team.
- Extensive experience working in busy restaurant environments.
- 3 to 5 years of experience in a cook position.
- Fine dining experience preferred.
