Key Responsibilities:
- Kitchen Operations & Food Quality
- Oversee all kitchen operations to ensure smooth workflow and timely service.
- Develop and maintain high culinary standards for taste, presentation, and consistency.
- Supervise food preparation to ensure compliance with recipes and quality expectations.
- Ensure compliance in food safety, hygiene, and sanitation standards.
- Menu Development & Innovation
- Create, assess, and refine seasonal and signature menus that align with the restaurant’s concept and target audience.
- Stay updated on food trends and introduce innovative dishes in accordance based on customer preferences with the kitchen and waitstaff.
- Maintain a balance between creativity and cost-effectiveness in menu planning.
- Collaborate with management on menu pricing and profitability analysis.
- Staff Management & Leadership
- Hire, train, mentor, and supervise kitchen staff, including sous chefs, line cooks, and other team members.
- Foster a positive, disciplined, and team-oriented kitchen environment.
- Schedule and assign work to ensure efficiency and proper staffing levels.
- Conduct performance reviews and provide ongoing training to enhance culinary skills.
- Budgeting & Cost Control
- Manage and analyze financial reporting, budget forecasts, and performance metrics to identify areas for improvement and achieve business objectives.
- Proficiency in budgeting, financial analysis, and inventory management.
- Manage kitchen expenses, including food costs, labor costs, and equipment maintenance.
- Source and negotiate with vendors to ensure quality ingredients at the best prices.
- Implement portion control and waste reduction strategies to maximize profitability.
- Compliance & Safety
- Ensure compliance with health, safety, and sanitation regulations.
- Maintain proper documentation for food safety and inspection readiness.
- Oversee the maintenance and cleanliness of all kitchen equipment and workspaces.
- Bachelor’s degree in hospitality management or a related field preferred.
- Proven experience as a Food & Beverage Manager, or similar leadership role in an upscale or waterfront dining establishment.
- Culinary degree or relevant certification preferred.
- Food safety certification and knowledge of health and safety regulations.
- Strong POS system knowledge and skills.
- Strong organizational and problem-solving abilities, with a keen attention to detail.
- Strong knowledge of kitchen operations, menu planning, and food cost management.
- Excellent leadership, communication, and problem-solving skills.
- Ability to work in a fast-paced, high-pressure environment.
- Strong understanding of food safety regulations and kitchen hygiene standards.
- Creativity and passion for food innovation.
- Outstanding customer service skills, with a passion for delivering an exceptional dining experience.
- Respond in a timely professional and timely manner to any customer inquiries, feedback, or complaints to exceed guest expectations.
- Implement marketing and promotions to attract new customers and increase revenue.
- Foster strong relationships with suppliers, vendors, and local community stakeholders.
- Knowledge of State of NC ABC laws and regulations.
- Serve Safe Manager Certification preferred. Food handler safety certification and knowledge of health and safety regulations.
- Flexibility to work evenings, weekends, and holidays as required.
- Salary will be based on experience.
