Job Description
ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Start and stop all processing equipment at start-up, shutdown, and in times of emergency or breakdown
- Monitor and adjust times and temperatures on the blancher, dryer, retrograde, former, and fryer.
- Mix batter and operate batter equipment as needed for production.
- Operate oil reclaim equipment to optimize recovery and product quality
- Regulate chemical, ingredient and condiment additives to the process as required to meet company Q.A. specifications
- Monitor and operate process control equipment and make adjustments as needed
- Record production rates, equipment time, temperature settings, condiment usage, oil type and usage, etc.
- Maintain oil level in the fryers and bring oil from the proper holding tanks as needed
- Maintain cleanliness of the process areas as needed and perform full boil out cleaning of the blanchers and fryers
- Perform laboratory chemical checks at the assigned frequency to include free fatty acid, SAPP, brix, etc. and record the data
- Regulate product flow on the precool chain
- Assist in the training of new personnel
- Other tasks and duties as assigned by a supervisor
Basic & Preferred Qualifications
SAFETY: Must have a complete knowledge and understanding of the plant safety rules including but not limited to the lockout-tagout procedure, chemical hazards and the hearing conservation program. Must have good personal hygiene and be able to practice safe work habits.

EDUCATION and/or EXPERIENCE: One (1) to ninety (90) shifts related training; or equivalent combination of education and experience.
LANGUAGE SKILLS: Must be able to effectively communicate in English including reading and writing. Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively communicate in English commensurate with the requirements of this position.
MATHEMATICAL SKILLS: Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
REASONING ABILITY: Ability to define problems, collect data, establish facts, and draw valid conclusions. Ability to interpret an extensive variety of technical instructions in mathematical or diagram form and deal with several abstract and concrete variables.
OTHER SKILLS and ABILITIES: Operational knowledge of all processing equipment in assigned area(s).
