Summary of Position: The Expeditor position acts as a central point of control and communication between the restaurant servers and the kitchen line. The "Expo" speeds up the delivery of food orders by efficiently transitioning food orders from the cooking line to the service staff who deliver orders to the customer.
The Expeditor exercises authority over the front line where plates are consolidated by ticket, inspected for consistency with the order and with Land's End quality and plating standards. The Expo garnishes plates for presentation to the customer and prompts servers when the order is ready. The position requires knowledge of cooking times and plate presentation to support the team in a fast-paced environment. Special attention is placed on teamwork and on keeping a positive temperament and flow of communication.
Essential Functions:
1. Stock, organize and clean expo line at beginning and throughout shift.
2. Ensure all food orders originate through the POS system and are prepared timely and in the sequence ordered. Review each ticket to make sure the order is filled.
3. Monitor plates for quality and consistency with Chartroom standards.
4. When on the line, act as sole point of control and communication for all orders coming over the cooking line.
5. Note table number and server on back of ticket, as well as the time order is filled.
6. Act as intermediary between line cooks and servers. Coordinate effectively with all production team members. Respond well to direction of Restaurant Manager.
7. Assist in expediting soup, bread, house salads as requested.
Required Knowledge, Skills, and Abilities:
1. Able to perform the role of server. High-volume restaurant experience preferred.
2. Physical stamina and manual dexterity; able to stand, bend, squat, and twist for several hours at a time, and to carry heavy trays of beverages and food.
3. Ability to assert authority and to maintain an even temperament when challenged.
4. Must possess organizational skills, a good memory and attention to detail-as well as a willingness and ability to enforce consistency and high standards.
