Dining Manager – Residential Living and Retail
- Schedule varies typically Monday - Friday 9:00 AM - 5:30 PM or 10:00 AM - 6:30 PM
- Includes some weekends and every other holiday rotation
- 80 hours bi-weekly.
Maintains high standards in food preparation/ production, delivery, service, and sanitation for residents, team members, special events, and Retail and Residential Living Dining areas. Responsible for personnel management including developing staff assignments, scheduling, work routines, team member interviews and selection, training, safety, and annual performance appraisals as directed by the Director of Dining Services. Directs work according to a prescribed set of standards and procedures that meet regulatory agency and Landis Homes' operational objectives and provides food and service that meets or exceeds resident/customer expectations.
Dining Manager Description:
- The person will work in tandem with Chef Managers in RL & Retail areas (Gather, Bistro, West Kitchen, Garden Room)
- Overseeing restaurant operations for Owl Hill Bistro restaurant. Managing of waited service on Owl Hill Bistro for Dinner, additional Front of the House support and training.
- Supervising and coaching all RL & Retail Dining Asst roles for performance.
- Coordination of scheduling, payroll, onboarding processes, training, growth and communication plans for all Dining Assistants, supervisors and utility staff for the RL and Retail Dining spaces.
- Management of procedures, especially Front of the House for Garden Room, Owl Hill Bistro, Gather, Catering and services to ADS and SVL.
- Point of Sale system administration, digital and print marketing, retail packaging.
- Coordination of reservations, delivery and take out processes and execution of special event meals on campus, advising PC & HC management team as needed. Organizing consistency at all levels of care.
- Oversee merchandising of Grab and Go and other customer forward-facing products.
- Front of the House space planning and design/decorating
- Direct RL resident liaison for engagement, concerns and special needs.
- Assists with food and supply ordering/receiving, storage, menu development, sanitation and safety. Evaluates and inspects quality of prepared food items. Conducts inventory of food and supplies.
- Oversees food quality, presentation, adherence to food safety standards for storage, preparation and distribution, and overall cleanliness of kitchen and related food service areas.
- Supervises/participates in the preparation and service at special event meals and functions.
- Ensures proper dishwashing, pot washing, and sanitation procedures are adhered to in assigned areas. Instructs kitchen staff regarding operation of new equipment.
- Schedules staff and delegates tasks.
- Schedules and conducts daily pre-meal communications and monthly staff meetings.
- Demonstrates knowledge of special diets and typical allergens. Works with Director of Residential Living, Dietitian, System Executive Chef and the Director of Dining Services regarding any dietary concerns, allergies and/or restrictions of residents.
- Circulates in the dining areas during meal periods and catering events to field resident/guest comments pertaining to service and food quality. Immediately attempts to correct problems and communicates issues and their resolution to appropriate team members.
- Creates work routines and assigns duties to Dining staff. Monitors staff performance to assure quality and quantity of work performed. Oversees the day to day operation and work performance of Dining team members. Takes corrective action when team member performance does not meet expectations.
- Assures that food and beverages are served according to Landis Homes and Lifestyles standards and established style and order of service is adhered to in the dining rooms and at special functions.
- Assists in predicting, planning, monitoring and evaluating departmental expenses and revenue.
- Manages cash flow consistent with POS system.
Dining Manager Qualifications:
- High school diploma/GED or demonstrated proficiency in reading and writing skills required.
- Certified in Serv-Safe or obtains certification within six months of hire.
- Minimum 2 years experience in related field or supervisory setting required.
- Must pass written measurement test demonstrating ability to perform simple measurement and math calculations for portioning and recipe adjustment.
- Possesses comprehensive knowledge of food preparation, safe food handling and storage procedures and food preparation equipment.
- Capable of following standardized recipes, expanding recipe volumes and performing accurate measuring.
- Proficient in use of computer and related technology required for the role.
- Good verbal, non-verbal and written communication skills required.
- Demonstrates leadership, management skills, dependability and a positive demeanor.
