Compensation:

Summary

Our most successful Dietary Manager candidates will be energetic, engaging and deeply compassionate leaders who inspire their team to follow their lead. Responsibilities

The primary objective for the Dietary Manager is to set consistent goals for the highest quality service in the Food Service Department at Landmark. The Dietary Manager will work in cooperation with the Executive Director toward the goal of achieving economies of scale and cost containment. Directs Food Service Department to prepare and cooks family style meals for Landmark, serves and prepares meals for patients also ensures the kitchen continuously meets all standards of the FDA Food Code.

  • Team First. Attitude is everything. Accepts assigned duties in a cooperative manner. Performs other related duties as directed by Executive Director.
  • Plans a four-week rotating menu that is approved by a registered dietitian annually or in the event the menu is revised significantly.
  • Ensures that menu is reviewed and approved by a registered dietitian annually or in the event the menu is revised significantly.
  • Assures that health department inspections are on file and rating is within corporate guidelines.
  • Assures that all kitchen staff have current worker handler’s permits where applicable.
  • Plans and posts staff work schedules at least one week in advance, calculated in FTE and strictly complying with the labor budget.
  • Assures that the menu plan is flexible enough to accommodate residents with moderate specialty diet needs.
  • Establishes a procedure to assure that all invoices are coded and receiving reports completed on a daily basis. Assures that what was ordered was actually delivered.
  • Ensures month to date daily food cost is within budgetary guidelines--Keeps perpetual and physical inventories within 3%-5% of each other at the end of the month.
  • Ensures all food handling is in conjunction with local and corporate health and sanitation requirements.
  • Maintains daily food and beverage log documentation to remain compliant with Joint Commission standards.
  • Assures that department consistently meets budgetary guidelines each month.
  • Evaluates staff performance including discipline as it relates to those standards.
  • Plans work schedules to ensure adequate service considering vacations, leaves, etc.
  • Inspects and evaluates physical condition of kitchen and dining rooms.
  • Establish a duty roster for days, nights and weekends.
  • Assist with maintaining clean, organized and inventoried storerooms.
  • Establishes a schedule for cleaning and operating all food preparation and serving equipment.
  • Develops procedures to assure that kitchen sanitation is maintained on a daily basis with training for each position and daily side work task lists.
  • Maintains an implementation strategy for OSHA compliance including the Bloodborne Pathogens standard and the Hazard Communication Standard.
  • Works with Executive Director, residents and families to determine amount and kind of foods, as well as selecting recipes from conventional cookbooks, or developing new recipes for new food products.
  • Works with and supervises cooks to train staff in portions and garnishes for hot cooked foods, such as meat and vegetables, into individual serving dishes; food storage and tray assembly to include portioned salads, desserts, rolls, cream, and other cold food items from refrigerator or pantry.
  • Works with and supervises cooks on preparation of foodstuffs according to recipe to test quality and standardize procedures and ingredients including baking breads and pastry and cutting meat, in quantities according to menu and number of persons to be served.
  • Recruits interviews and hires staff. Assure that staffing needs are within specific department budget limits. Train and schedule training including interpreting policies, procedures and management communications.
  • Trains and directs activities of staff workers who assist in preparing and serving meals.
  • Assures that all dining room tables are cleared and sanitized after each meal.
  • Develops, tests, and promotes various types of food products, suggesting new products, improvements, and promotions. Evaluates prepared item for texture, appearance, flavor, and nutritional value.
  • Coordinates and presents food items at special functions
  • Performs other administrative and supervisory duties to ensure efficient and profitable operation.
  • General Requirements: Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. The environment is fast-paced and often emotionally charged when dealing with staff, families and residents. It requires effective management of time and schedule constraints, interpersonal communications and “customer” service demands.

Qualifications

  • High School diploma or one-year certificate from college or technical school with special training in culinary arts; or six months related experience and/or training; or equivalent combination of education and experience.
  • Must have demonstrated experience as a chef and has supervisory and management skills. And have Safe-Serve Sanitation training certificate.
  • Must be committed to a drug-free lifestyle and responsible alcohol use
