Job Overview:
The Chef de Cuisine will play a vital role in leading Café Largesse’s kitchen, contributing to the creative direction and ensuring an exceptional dining experience. Reporting:
The Chef de Cuisine reports directly to the Owners.
Primary Roles and Responsibilities:Creative Culinary Leadership:
- Lead the creative development of seasonal menus, specials, and events, aligning with Café Largesse's creative ethos.
- Collaborate with the team to craft dishes that are both delicious and visually stunning, with a focus on innovation and presentation.
- Work any kitchen station as needed, including hot line, prep, and garde manger.
Food Quality and Safety:
- Maintain the highest standards of food quality, presentation, and safety.
- Develop and implement food safety systems, including shelf life, storage, sanitation, and efficiency protocols in accordance with local county regulations.
Financial Management:
- Manage budgets for cost of goods (COG), cost of labor (COL), supplies, equipment, and maintenance.
- Oversee inventory, daily ingredient ordering, and prep planning to ensure optimal kitchen performance.
Team Development:
- Recruit, hire, and onboard culinary talent.
- Mentor and train staff to foster a positive, creative, and collaborative kitchen culture.
- Conduct performance reviews, manage attendance, and implement performance improvement plans when necessary.
Operational Oversight:
- Create and manage standard operating procedures (SOPs) for the savory kitchen.
- Maintain communication and accountability through daily reporting and team updates.
Kitchen Culture:
- Promote a positive and inclusive work environment.
- Lead by example, emphasizing mentorship, communication, and collaboration.
Requirements:
- 3 years of experience in a high-quality, professional kitchen.
- 2 years in a management role (Sous Chef or Chef).
- Culinary degree preferred.
- Excellent organizational, leadership, and communication skills.
- Ability to thrive in a fast-paced, deadline-driven environment while fostering creativity.
- Strategic thinker with a proactive approach to problem-solving.
- Fluency in English; Spanish is a plus.
Compensation and Benefits:
- Salary: $70,000- $80,000 annually (based on experience and performance).
