Food Preparation and Service Lead
Job Summary
The Food Preparation and Service Lead is responsible for maintaining quality food preparation and service to guests and employees during their assigned shift.
Key Responsibilities
- Perform all functions of supervised positions.
- Train kitchen employees in food preparation and presentation according to specifications.
- Maintain highest possible sanitation standards to prevent food-borne illness.
- Manage schedules and organization of kitchen staff.
- Work effectively at all stations.
- Knowledge of food products and ordering process.
- Document incidents, injuries, attendance, and menu changes.
- Interface with dining room staff for effective guest service.
- Delegate tasks efficiently and conduct daily inspections.
- Stay informed about property events and attend mandatory meetings.
- Maintain confidentiality and sensitivity to Native American Culture.
- Operate within policy parameters and secure assets.
Requirements
- Knowledge of food quality standards.
- Buffet, full-service, catering, and room service experience.
- Excellent communication skills.
- Able to work independently.
- Working knowledge of food service equipment and utensils.
- Federal and state sanitation guidelines.
Physical Requirements
- Physically capable of standing for long periods.
- Subject to internal working conditions, including a smoking environment.
- Lift up to 50 lbs.
Education and Experience
- High School Diploma or GED required.
- Culinary coursework preferred.
- Minimum two years of supervisory experience in a professional kitchen environment.
- Basic computer experience.
Certificates and Licenses
- Tribal/State compact licensing requirements.
- Pass criminal background check and submit to drug testing.
