Provides safety and well-being for all youth, families, staff, and visitors while ensuring the cleanliness and proper operation of the kitchen facilities. The Cook is responsible for preparing and cooking a variety of food products, including meats, fish, vegetables, soups, and other hot food items, cooking in large batches and performing "To Order" cooking as needed. This position will also perform additional duties to ensure the smooth operation of the kitchen. The Cook is responsible for maintaining a clean and well-organized kitchen and will collaborate closely with the Foodservice and Retail Manager.
Essential Responsibilities

Liliʻuokalani Center (LC):
Informed by a deep understanding of the adolescent experience and grounded in Hawaiian culture, the new LC will provide Hawaiian youth with opportunities to connect to peers and mentors, receive supportive services, and discover pathways to passion, purpose, and prosperity. LC will be LT’s signature youth development hub for culture, creativity, technology, and play, and will serve as a resource center where youth can connect to vital supports and a vibrant community. LC will be a safe space located in urban Honolulu where youth are inspired to pursue their dreams, including exploring pathways in the arts, sports, technology, and entrepreneurship while receiving wraparound support to help them reach their goals and become thriving adults. A primary function of LC will be to provide a space for young people to play, to learn, to find connection and inspiration, and to experience joy. Currently under construction, LC is set to open in Fall of 2025.

Essential Responsibilities
- Complete DOH Food Safety and Sanitation Course successfully
- Understand and comply with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures
- Maintain sanitation, health, and safety standards in all work areas
- Clean food preparation areas, cooking surfaces, and utensils
- Verify that prepared food meets requirements for quality and quantity
- Cook and package batches of food according to recipe and production sheets
- Prepare specialty foods following specific methods that usually require short preparation time
- Operate large-volume cooking equipment such as grills, deep-fat fryers, or griddles, tilt skillet, combi oven, pizza oven
- Read food order slips or receive verbal instructions as to food required by customer, manager, or BEO, and prepare and cook food according to instructions
- Measure ingredients required for specific food items being prepared
- Clean, stock, and restock workstations and display cases
- Wash, cut, and prepare foods designated for cooking and recipe standards
- Prep all items needed for service, for later use
- Attending all scheduled employee meetings and offering suggestions for improvement
- Coordinate with and assist fellow employees to meet guests’ needs and support the operation of the restaurant
- Maintain Hazard Analysis and Critical Control Point records
- Flexibility to run multiple stations efficiently
- Wash dishes as needed
- Fill-in for fellow employees where needed to ensure guest service standards and efficient operations
- Schedule activities and equipment use with managers, using information about daily menus to help coordinate cooking times
- Assist with orders and receive delivery of supplies
- Ensure in-house catering orders are directed to proper areas and groups
- Perform additional duties as needed and assist teammates
- Fill in production records accurately
- Complete physical inventory count
- Commercial machinery: will proficiently operate blenders, food processors, food slicers, mixers, coffee or iced tea makers, convection ovens, deep fryers, griddles, grills, heat lamps, hot dog grills, pizza ovens, ranges, cutlery, scales, Ice dispensers, wooden oven paddle (bakers' peel)
- Responsible for POS software, systems, food management, and workstations
- Must have a 2-year associate degree or vocational school diploma
- Minimum 3-4 years’ experience with cooking in high volume production kitchens and with local and Hawaiian foods
- Knowledge of the industry and relevant health and safety regulations
- Strong attention to detail
- Ability to work in a fast-paced environment
- Exceptional time management skills
- Excellent kitchen administration knowledge and ability to work as part of a team
- Excellent understanding of various cooking methods, ingredients, equipment, and procedures
- Must be open to deep collaboration
