Role Summary
Working with a seasoned and fantastic banquet team, the Banquet Manager is responsible for the direction and management of special events and banquets for all venues and outlets in accordance with The Lodge at Blue Sky standards. You will direct, implement, and maintain a service standard and management philosophy which serves as a guide for team members. If you love a multi-faceted role, this one's for you. You’ll be responsible for all facets of banquet operations including, but not limited to: revenue achievement, cost control, payroll management, purchasing, receiving, budgeting, forecasting, standard development/maintenance, successfully executing events and staff development.
Core Responsibilities
Please note that this is not an exhaustive list of everything that needs to be done! Within the Auberge family, our people always find new ways to look after the business, their guests, and their teammates. Within this, the key responsibilities for this position are:
- Lead and grow banquet team members, including coaching and developing performance, ensuring the highest service standards and providing timely and supportive performance evaluations. Additionally, lead daily rallies and weekly/monthly team meetings.
- Develop, maintain and expand knowledge of: menu selections available in outlets, department finances, venue layouts, and POS procedures.
- Employ Auberge ENRICH values to ensure guest satisfaction, working cross-functionally with all team members to provide excellence in service and experiences. Participate in and support resort and company efforts towards sustainability and environmental initiatives.
- Collaborate with the Executive Chef and culinary team on all menus, including development, presentation, pricing, pre-implementation tasting, and implementation.
- Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
- Ensure that scheduled inventories (food, beverage, china, glass, silver, linen, and liquor) are accurately performed.
- Manage BEOs accurately and in a timely manner from initiation to execution, partnering with appropriate department partners.
- Ensure that all revenues and costs are within budgeted parameters.
- Complete daily billing for all Banquet events.
- Complete timely and accurate orders for all food, alcohol, and nonperishable item for the Banquets department.
- Manage payroll inclusive of tip point break outs.
- Develop and review staff schedules, ensuring that they are in accordance with anticipated business demands.
Qualifications
Required
- High School diploma or equivalent experience, with a minimum of five years of experience working in food & beverage management and, preferably, banquet management.
- Two years’ experience as an Assistant Food & Beverage Manager or Banquet Manager, preferably at a Mobil four star (or equivalent) or better resort.
- Minimum 21 years of age.
- Current manager’s food handling certificate, as well as On-Premise Alcohol Service certification and valid driver’s licence.
- Ability to satisfactorily communicate in English with guests, management and coworkers to their understanding.Certification of previous training in liquor, wine, and food service desired.
- Familiarity with food/beverage and labor cost control.
- Strong knowledge of wines, with focus on Napa Valley and California wineries and appellations.
- Ability to communicate in a language other than English, preferable French, German or Spanish.
- Computer training, preferably in Agylisis, HMS, Hot SOS, and Google Suite.
- Ability to work a flexible schedule, to include weekends, evenings, and holidays as needed for the benefit of departmental coverage.
PHYSICAL DEMANDS
- Frequent or occasional need to perform the following physical activities: reaching, bending, pushing, pulling, twisting, lifting, and climbing. Have frequent need to perform standing and walking activities related to inspecting property.
- Constant need to perform the following physical activities: grasping, turning, finger dexterity.
- Occasional need to stand for long periods of time.
- Lifting/carrying up to 10 lbs. frequently and 25 lbs. occasionally.
- Hearing requirements: constant need to speak on telephone and/or two-way radio, respond to the general public and converse with staff.
