PURPOSE OF POSITION :
As Executive Chef, you will lead a team of culinary professionals to deliver exceptional, high-quality food while upholding food safety, sanitation standards, and fostering a positive team environment. Your role will be crucial in driving top-line sales and enhancing guest satisfaction across all dining experiences, including the restaurant, lounge, in-room dining, and banquet services. By consistently providing an outstanding culinary experience, you’ll contribute to both the success of the business and the satisfaction of our guests.
RESPONSIBILITIES & DUTIES :
- Culinary Leadership (40%)
Lead, manage, and mentor a team of culinary professionals. Ensure the highest quality food is prepared according to company standards and recipes. Develop and implement seasonal menus, keeping up with culinary trends. Train and guide team members, fostering a positive and efficient kitchen culture.
Design and update menu offerings based on seasonal ingredients and guest preferences. Collaborate with the purchasing team to source high-quality ingredients at competitive prices. Develop food cost strategies, monitoring costs, and ensuring that standards of food quality are consistently met.
Oversee kitchen operations, ensuring smooth functioning in all aspects of food preparation, cooking, and presentation. Maintain and ensure proper sanitation and safety procedures are followed. Handle scheduling to align with business needs, while managing labor costs and approving overtime.
Supervise the purchase and procurement of food supplies, ensuring both quality and cost control. Maintain kitchen equipment, ensuring it is in proper working condition and report any damages for repair.
Foster a collaborative and communicative environment between culinary and other hotel departments. Provide clear, concise instructions to kitchen staff, and work closely with the front-of-house team to ensure a seamless guest experience. Respond to guest feedback and make improvements when needed.
THE IDEAL CANDIDATE WILL HAVE :
Minimum of 3 years as Executive Sous Chef or Chef de Cuisine, with significant experience in luxury hotel environments.
Culinary degree is a plus.
Expertise in menu development and food trends.
