Job Overview :

The Breakfast Sous Chef is responsible for overseeing all aspects of the breakfast kitchen operations at Palm House. This includes managing and supervising the kitchen staff, preparing high-quality breakfast items, ensuring efficient food production, and maintaining consistency and presentation. The Breakfast Sous Chef works closely with the Executive Chef to ensure smooth daily operations while adhering to health and safety standards. The position requires exceptional leadership, culinary expertise, and the ability to work efficiently in a fast-paced environment. The Breakfast Sous Chef will ensure that every guest has an exceptional breakfast experience at Palm House.

Key Responsibilities :

Team Supervision and Leadership :

Assist in leading and managing the breakfast kitchen team, including cooks, prep staff, and other kitchen personnel.

  • Provide guidance and training to kitchen staff, ensuring they meet culinary standards and food safety regulations.
  • Foster a positive and efficient work environment, encouraging teamwork and maintaining morale.
  • Ensure that all team members are following proper hygiene and food safety practices.

Food Preparation and Cooking :

Prepare high-quality breakfast dishes, including hot items, pastries, fruits, and specialty items, ensuring consistency in taste and presentation.

  • Oversee the daily breakfast station to ensure it is set up, stocked, and running efficiently throughout service hours.
  • Ensure that all dishes are prepared according to the Palm House menu and recipes.
  • Prepare, cook, and plate food items as necessary to maintain an efficient flow during service.
  • Menu Development and Planning :

    Assist in menu planning and development, offering creative ideas to enhance breakfast offerings.

  • Ensure all breakfast items are prepared to order and meet quality standards.
  • Work with the Executive Chef to review and adjust the breakfast menu based on guest feedback, seasonality, and availability of ingredients.
  • Inventory Management :

    Ensure the proper storage of all food items and ingredients to maintain freshness and prevent spoilage.

  • Assist in ordering, receiving, and organizing supplies and ingredients for breakfast service.
  • Track inventory levels and manage food cost by minimizing waste and ensuring efficient use of resources.
  • Health and Safety Compliance :

    Maintain a clean, organized, and safe work environment by adhering to all health and safety regulations, including food handling, sanitation, and cleanliness.

  • Ensure all kitchen staff comply with Palm House’s health and safety standards and the local health department requirements.
  • Follow proper protocols for cleaning kitchen equipment and tools, ensuring that all kitchen areas are cleaned and sanitized after each shift.
  • Quality Control and Guest Satisfaction :

    Monitor the quality of food preparation and presentation to ensure consistency in every dish served.

  • Resolve any guest concerns related to breakfast dishes promptly, ensuring customer satisfaction.
  • Collaborate with the Front of House team to ensure a seamless breakfast service and timely delivery of meals.
  • Operational Support :

    Assist the Executive Chef in managing the kitchen staff during peak hours.

  • Ensure proper shift handover and communication of daily needs or adjustments between shifts.
  • Maintain proper inventory control and ensure the kitchen operates within budget constraints.
  • Assist with scheduling, training, and motivating staff, as well as conducting performance reviews.
  • Qualifications :

    Education and Experience :

    Culinary degree or equivalent formal training preferred.

  • A minimum of 3-5 years of professional cooking experience in a high-volume kitchen, with at least 1 year in a supervisory role.
  • Experience working in a fine dining or upscale hotel / resort environment is preferred.
  • In-depth knowledge of breakfast cooking techniques, food safety standards, and kitchen equipment.
  • Skills and Abilities :

    Strong leadership and communication skills.

  • Ability to work efficiently in a fast-paced and high-pressure environment.
  • Excellent time management skills and attention to detail.
  • Creative and able to offer ideas for menu enhancements.
  • Strong knowledge of food safety regulations and the ability to train staff on these protocols.
  • Ability to manage multiple tasks and priorities at once.
  • Physical Requirements :

    Ability to stand for long periods of time and work in a hot, fast-paced environment.

  • Ability to lift and carry up to 50 pounds.
  • Must be able to bend, twist, and perform repetitive tasks as necessary in a kitchen environment.
  • Additional Requirements :

    Flexibility to work early morning hours, weekends, and holidays as needed.

  • Ability to obtain and maintain any required certifications or licenses.
