The Executive Kitchen Manager manages the daily operations of the Back of the House (BOH), focusing on food preparation, quality, and sanitation. Responsibilities also include supervising subordinates, managing BOH labor costs, waste, and controllable comps.
Responsibilities Include :
- Manage a team of 4-7 supervisors. (Salary / Hourly)
- Overseeing weekly BOH schedules for 100 plus employees.
- Coordinating with GM / AGM on payroll and time clock adjustments
- Handling seafood purchases from approved vendors
- Ensuring cleanliness and maintenance of kitchen equipment and facilities
- Supervising purchasing / receiving departments
- Maintaining high standards of service and product quality
- Ensuring adherence to health regulations and LuLu’s Allergy Program
- Overseeing kitchen opening and closing functions
- Coordinating with event managers for on and off-site parties
- Training, hiring, and supervising kitchen staff
- Monitoring food storage, labeling, and rotation
- Ensuring compliance with company policies and core values
- Participating in continuing education and training
