JOB DESCRIPTION (Summary)
Responsibilities will include but not limited to:
1. Prepare meals for detainees of Madison County Community Corrections/Justice Center according to established menus and schedules and food supplies.
2. Plans and prepares additional meals for Detainees with special dietary needs, as required.
3. Assists with serving meals as scheduled.
4. Ensures the cleanliness of kitchen areas and all cooking utensils, and sanitation of counter areas and floor.
5. Oversees duties of Trustees including preparing food, cleaning kitchen, and delivering meals to designated areas.
6. Verifies food stock received and places in storage areas.
7. Maintains the cleanliness and serviceability of all facility cooking and related appliances.
8. Working knowledge of the principles of proper nutrition and sanitary food preparation, and ability to apply such knowledge to the preparation of large quantities of food.
9. Ability to read and follow written instructions and recipe directions.
10. Ability to work with other Staff Members and to follow established schedules and meal plans.
11. Incumbent performs duties which generally involve standing and light to moderate lifting of packaged food and cooking utensils. In most cases, extreme physical effort is either not exerted, or if necessary, exerted for brief durations.
12. Knowledge of safety precautions and use of various industrial kitchen equipment, including slicer, fryer, grill, oven, steamer, steam kettle, dishwasher, and mixer.
13. Knowledge of safety precautions and practices applicable to working with a variety of cleaning chemicals and equipment, with ability to read and understand equipment manuals and label directions for correct mixing and use of cleaning supplies.
14. Ability to effectively communicate orally and in writing with co-workers, other County departments, residents, general inmates, and the public, including being sensitive to professional ethics, gender, cultural diversity, and disabilities.
15. Ability to work alone with minimum supervision and with others as a team environment.
16. Ability to work on several tasks at the same time and work rapidly for long periods, occasionally under time pressure.

EDUCATIONAL REQUIREMENTS:
High School Diploma or GED.
JOB REQUIREMENTS (SUMMARY)
Responsibilities will include but not limited to:
1. Incumbent serves as Kitchen Aid for Madison County Community Corrections/Justice Center (CC/JC), responsible for overseeing general kitchen operations, meal preparations, and assigned trustees. Initiative is allowed in determining alternate meals in response to shortages of supplies.
2. Incumbent performs duties indoors in a secured facility, Kitchen, and is exposed to normal hazards of jail environment where safety or health may be jeopardized.
3. To perform this position successfully, an individual must be able to perform each essential duty satisfactorily.

5. Oversees trustee inmates using kitchen equipment, preparing, and serving meals, and sanitizing kitchen areas, equipment, and supplies.
6. Plans and prepares special meals for detainees and/or staff with unique dietary needs, as required.
7. Takes inventory of food stock and kitchen supplies; and communicates with supervisor and/or orders from vendors as needed.
8. Receives food and supply orders, including inspecting items delivered and ensuring food and supplies are properly stored.
9. Inspects kitchen daily, ensures cleanliness of kitchen areas, including walls, counters, floors, and kitchen equipment and supplies. Report maintenance concerns to Maintenance Supervisor.
10. Knowledge of Board of Health requirements and ability to comply with procedures and policies as set.
11. Trains new trustee inmates and on various duties, including cooking, cleaning, stocking supplies, and sanitizing kitchen areas, equipment, and supplies.
12. Must be 21 years of age.
13. Ability to meet all departmental hiring requirements, including passing of a drug test and obtaining safety and sanitation certificate.
14. May perform duties of other kitchen personnel as needed.
15. Performs related duties as assigned.
16. Ability to comply with all employer and Department policies and work rules, including, but not limited to, attendance, safety, drug-free workplace, and personal conduct.
