TITLE: Kitchen Supervisor
REPORTS TO: Dietary Manager
Non-Exempt
PURPOSE OF POSITION:
The "Kitchen Supervisor" oversees the daily operations of the kitchen, ensuring food is prepared safely and according to dietary restrictions, managing kitchen staff, maintaining sanitation standards, and coordinating meal service delivery to residents, all while adhering to facility policies and regulations related to food service in a senior care setting.
Key responsibilities:
Staff Management:
- Training and supervising kitchen staff including cooks, prep-cooks, and dishwashers.
- Adheres to the staff schedule, meeting meal service demands, adjusting when necessary.
- Participate in staff performance evaluations and disciplinary actions when necessary.
Food Preparation and Quality Control:
- Following established menus and recipes to ensure the dietary needs of residents are met.
- Monitoring food quality, presentation, and portion sizes.
- Inspecting food deliveries for freshness and proper storage.
- Implementing special dietary modifications for residents with allergies or medical conditions.
Sanitation and Safety:
- Maintaining a clean and sanitary kitchen environment.
- Enforcing proper food handling and safety procedures.
- Regularly inspecting equipment for functionality and cleanliness.
- Adhering to local health department sanitation regulations.
Inventory and Cost Control:
- Assist with Food and Supply Orders and maintaining inventory levels.
- Monitoring food costs and implementing strategies to minimize waste.
- Collaborates with DM in the review of invoices and purchase orders for accuracy.
Communication and Collaboration:
- Collaborate with RD and nursing staff to ensure resident dietary needs are understood and met.
- Communicating with residents, family members, and other departments regarding meal service.
- Reporting any food safety concerns or resident dietary issues to the appropriate management.
Required Skills and Qualifications:
- Experience in a kitchen supervisory role, preferably in a healthcare setting.
- Knowledge of food safety regulations and sanitation practices.
- Understanding of special dietary needs and meal planning for the elderly.
- Ability to manage staff effectively and delegate tasks.
- Strong organizational and time management skills.
- Excellent communication and interpersonal skills to interact with residents, families, and staff.
