ESSENTIAL RESPONSIBILITIES
Prepare meals and serve using portion control directives.
Make sure all foods are pulled and thawed in proper time and stored properly.
Check menus and make sure any pre-preparation in completed.
Check daily menus and review daily production sheet with Director of Nutrition and Food Services.
Safely operate equipment, making sure it is properly cleaned and sanitized after each use. Report equipment problems as per community policy.
Take temperatures of foods for each meal and document.
Check daily temperatures of cooler / freezer and document.
Record meal substitutions, if applicable.
Maintain cleaning schedule to verify proper cleaning is completed on a daily basis and document.
Label and date foods and rotate properly.
Maintain effective communication with residents, families and community staff.
All foods are properly garnished for each meal.
Check foods in for accuracy and proper storage.
Straighten coolers, freezer, maintain perpetual inventory.
Assist with monthly inventories.
Participate in departmental quality assurance program.
Perform other tasks as assigned.
ESSENTIAL JOB FUNCTIONS :
This position requires for the care team member to be able to read, write, speak, and understand the spoken English language.
This position requires for the care team member to be able to reach (overhead), stand, walk, sit, pull, lift, carry, push, climb, balance, stoop, kneel, crouch, and twist.
This position requires for the care team member to have knowledge of quantity and quality cooking.
This position requires for the care team member to be knowledgeable of portion control and quality assurance.
This position requires for the care team member to have knowledge of modified diets.
This position requires for the care team member to have knowledge regarding ordering and / or purchasing of food items.
This position requires for the care team member to be familiar with Board of Health regulations and state requirements.
Nutrition Services employees are restricted from working in the Nutrition Services Department when suffering from a contagious infection or cold. This care team member must have a written notice from his or her physician stating he or she is free from being contagious and that he or she is able to report back to his or her job in the Nutrition Services Department.
These written statements should be filed in the personnel record of the care team member.
Lesions and Cuts - All dietary employees having cuts or lesions on the hands or fingers must wear a surgical rubber glove or a surgical finger. This is to cover the lesion tightly so there is no contact between the lesion and the food, which could infect the lesion more as well as contaminate the food touched by the employee. This person should be given other responsibilities other than in the food directly until the lesion is clear and free from drainage.
REQUIREMENTS :
High school diploma or equivalent.
Six months of experience in large quantity food preparation preferred.
Must be at least 18 years of age or older as federal child labor laws do not permit care team members younger than 18 years of age to work with or repair, adjust, or clean power-driven machines such as meat slicers and commercial mixers.
