Position Summary: : The Sous Chef Directs food preparation and collaborates with Executive Chef. Helps in the design of food and drink menu. Produces high quality plates, including both design and taste. Oversees and supervises kitchen staff. Assists with menu planning, inventory, and management of supplies.
Position Qualifications: : To perform this job successfully, the Sous Chef must be able to perform each essential duty and responsibility in a safe and satisfactory manner, must be punctual and have a good attendance record and have reliable means of transportation to work. - College degree and/or culinary experience in a high-volume, full-service restaurant or Culinary Program Curriculum; or equivalent combination of education and experience.
- Food handler certification
- Trained in knife skills and basic kitchen equipment.
- Ability to multitask under pressure and the ability to establish a positive rapport with many types of personalities.
- Ability to read and interpret documents in English such as safety rules, operating and maintenance instructions, and procedure manuals, newspapers, periodicals, journals, and manuals.
- Ability to write routine reports, correspondence, business letters, summaries, and reports in English using prescribed format, and conforming to all rules of punctuation, grammar, diction, and style.
- Ability to speak effectively in English before groups such as customers or employees.
- Sufficient computer skills that will allow them to be able to use, in a proficient manner, Company-issued software programs implemented at the hotel, including but not limited to the following: Email, ADP and kitchen related software or equipment.
- Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form.
- Ability to troubleshoot and problem solve quickly.
Position Duties include, but not limited to:
- Provide "excellent quality" and "presentation" of all food to the guests. The demonstration, preparation and execution of each menu item and the item specifications and presentation will be agreed upon.
- Train kitchen staff by modeling and teaching them the correct way to so things
- Responsible for the supervision of all kitchen staff, cooks, and dishwashers, during their shift. Making sure all tasks are completed efficiently and properly, and use of proper cleaning and sanitation procedures.
- Ensure all closing and opening procedures are followed properly.
- Responsible daily and weekly cleaning and sanitation schedule is being followed and equipment is being properly cleaned and maintained to minimize issues.
- Ensure hoods and the smoker are cleaned properly each day, and the proper maintenance is performed weekly.
- Report any issues with equipment are reported to the Executive Chef.
- Ensure the set up and stock of sufficient levels of food products at line stations to assure a smooth service period, restocking items to avoid running out during service and in preparation for the next day.
- Complete new prep lists for the next day prior to end of shift.
- Ensure that kitchen staff follow and complete kitchen checklists and prep lists.
- Proper guest service requires that the food is produced on a timely basis and that the servers are well educated regarding the menu, giving special attention to special requests and allergies.
- Know and consistently comply with our standard portion size, cooking methods, quality standards and kitchen rules, policies, and procedures. Use the proper utensils when serving food; weigh when needed; measure properly when following recipes.
- Prevent the spoiling and contamination of foods by following proper sanitation practices and ensuring compliance with policy and health regulations.
- Ensure food quality standards are being followed by checking food temperatures and occasionally tasting food for consistency
- Maintain a high level of cleanliness in the kitchen facilities, always following food safety and sanitation guidelines. This includes washing and cleaning the kitchen, cooking utensils, equipment, refrigerators, and storage areas.
- Clean before leaving and assist in the daily and weekly cleaning of the pantry, cooking line, prep kitchen, dish area, stairs, walk-in and downstairs prep area.
- Immediately report any maintenance or repairs needed to Chef de Cuisine or Executive Chef.
- Create and maintain a sound working relationship with all preparation personnel.
- Actively participate in training and development programs and maximizing opportunities for self-development
- Deals with the public, customers, employees, community member and government officials with tact and courtesy, fostering positive relationships and maintaining an appropriate level of community public affairs involvement
- Ensure full compliance to Company’s operating controls, SOP’s, policies, procedures, and service standards.
- Work with the Human Resource Director to establish and maintain a pro-active human resource function to ensure employee motivation, training and development, wage and benefits administration, and compliance with established labor regulations.

- Seasonal Bonus Program:
- All hourly employees will be able to participate in our seasonal bonus program. Each hourly employee will receive $1 per hour worked per season and $1.50 per overtime hour worked. Employees who are terminated or resign from their position before the end of each season, will not be able to participate in this program. If the season is cut short due to business levels, the employee will still participate in this program. Positions that are contracted at a shorter term, like the Outdoor Youth Adventures program, this employee will be able to participate in this program. All hours worked outside of these seasonal ranges will not apply to this bonus program.

During the winter months, you will have access to 50 Miles of world renown cross country ski trails right outside your back door.
- Health Insurance and PTO:
- If you remain with us for 1 full year and worked a minimum of 1560 hours during our 12-month lookback period (that takes place at the end of each year), you are eligible for full-time status. Full-time status means Vacation and Sick pay, medical, dental, life and vision insurance. This will be effective the first of the month following 30 days of your full-time employment hire date or status. The Ranch will pay for 80% of the premiums for employees and any dependents. Employees will be responsible for paying the remaining 20% of the premiums. Payment is deducted automatically from the employee’s semi- monthly paycheck at a pre-taxed rate.
