What are the responsibilities and job description for the Fryer Operator position at Mama Lola's LLC?
The Fryer Operator is responsible for constant monitoring of fluid levels and temperatures in the fryer, and monitoring equipment to assure proper product and fluid flows throughout the production process and equipment.
JOB RESPONSIBILITIES
1. Operates and maintains tortilla chip making machines, conveyor belts, tumblers, fryer, and tortilla chip chopper/loader.
2. Receives information from management on product to be produced.
3. Maintains close communication with Operations and Production regarding product parameters, and product consistency.
4. Will operate various PLC panels and computer touch screens to monitor and control equipment for proper flow of product.
5. Compile and record production data and reports on volume of production. Also, document oil usage/consumption, downtime, and additional metrics.
6. Collaborates with other operators to ensure continuous product flow.
7. Operates assigned production equipment per product specifications.
8. Prepares equipment for production and test runs. Troubleshoots process as needed.
9. Monitors and controls the temperature and time fryer to achieve product specification targets.
10. Performs various tests to ensure oil quality and upstream color.
11. Monitors and ensures oil levels in fryers and makeup tanks.
12. Monitors and ensures that circulation valves on the fryer are adjusted correctly.
13. Transfers oil from holding tanks to other tanks and/or fryer, when needed.
14. Cleans static product build-up out of the fryer during breaks in line-flow or when instructed by the Supervisor.
15. Maintains the fulfilment of the raw tortilla chips to the fryers constantly. Load more raw tortilla chips as needed.
16. Maintains cleanliness under and around fryer or tortilla chip chopper area.
17. Communicates problems in the line to appropriate personnel.
18. Assists in the training of new employees.
19. Responsible for end of shift duties such as disconnecting machinery, storing tools in proper locations, etc.
20. Provides suggestions to improve processes, procedures, and department in support of company goals.
21. Follows Company GMP’s and occupational safety regulations to ensure compliance.
22. Follows all food safety principles and legal requirements.
23. Maintains a positive and constructive work environment within the department as well as with the other departments and promotes teamwork.
24. During an emergency involving fire, flood, or bodily injury, goes directly to the manager on duty and reports the emergency.
25. Responsible for following all safety practices such as wearing Protective Personal Equipment (PPE).
26. Performs other duties as assigned.
JOB QUALIFICATIONS
A. High School Diploma or equivalent.
B. Minimum 2 years’ experience working as an industrial fryer operator or equivalent.
C. Knowledge of tortilla chips manufacturing processes, equipment, and terminology is preferred.
D. The ability to read and comprehend recipes, formula sheets, safety guidelines and other written material.
E. The ability to add, subtract, multiply, and divide in all units of measurement.
F. Strong verbal and written communication skills.
G. The ability to multi-task and deal with uncertainty, make good decisions, handle pressure, provide follow-through and attention to detail.
H. Familiarity with Good Manufacturing Practices (GMP) and Hazard Analysis and Critical Control Points (HACCP) principles is preferred.
I. Flexibility to work various shifts, including nights, weekends, and holidays, as needed.
J. The ability to obtain and maintain a valid AZ food handler card within 30 days of hire and throughout the duration of employment.
K. Demonstrated reliability, punctuality, and a positive work ethic.
L. Bilingual in English/Spanish is preferred.
PHYSICAL REQUIREMENTS
a. Ability to stand for extended periods and move around the production area.
b. Must frequently lift and/or move up to 50 pounds and occasionally lift and/or move up to 100 pounds with assistance.
c. Ability to bend, twist, stand, climb stairs/ladders, push/pull, and walk for length of shift.
d. Aptitude to operate production equipment and machinery, including repetitive hand and arm movements.
e. Agility to maneuver in confined spaces and navigate around obstacles safely.
f. Endurance to work in a fast-paced environment and withstand fluctuations in temperature and humidity.
SALARY
$18-$20 Per Hour
SCHEDULE
Shift times will vary based on company needs so a flexible work schedule is required. Must be available to work mornings and evenings, with weekends, overtime and holidays as needed.
