Job Title: Culinary Manager
A challenging and rewarding opportunity awaits a highly motivated and organized culinary professional to join our team at Marimn Health. As a Culinary Manager, you will be responsible for planning, organizing, and executing all food services for our Boys & Girls Club programs.
Qualifications:
- High school diploma or GED required.
- Must have experience working with individuals from varying cultural and socioeconomic backgrounds.
- Must have or be able to obtain Professional Rescuer First Aid and CPR certification, and Food Handler's Certificate.
- Minimum of two years of experience in a commercial kitchen with strong knowledge of kitchen operation procedures to include items such as ordering, inventory management, food safety, etc.
- Must have the ability to direct work of youth helpers and staff assistants.
Responsibilities:
- Responsible for the planning, organizing, ordering, preparing all food/menus for club programming year round.
- Responsible for managing and running a nutrition program for our Boys & Girls Club.
- Responsible for managing a commercial kitchen, including the initial set up and ongoing maintenance.
- Includes planning and ordering of food and providing teaching opportunities to program youth on nutrition and food safety.
- Responsible for determining the production schedules and staff requirements necessary to ensure timely delivery of services.
- Inspects supplies, equipment, and work areas to ensure conformance to established standards.
- Reports all accidents, incidents, and disciplinary actions to the BGC Manager.
- Estimate amounts and costs of required supplies, such as food and ingredients, and works with BGC manager to develop and adhere to the yearly budget.
- Monitors sanitation practices to ensure that employees follow standards and regulations.
- Analyzes recipes to assign prices to menu items, based on food, labor, and overhead costs.
- Checks the quality of raw and cooked food products to ensure that standards are met.
- Checks the quantity and ensures quality of received products.
- Makes recommendations for equipment, supplies and maintenance needs of the program.
- Attends required staff meetings, serves on assigned committees, and prepares reports as requested.
- Demonstrates new cooking techniques and equipment to staff.
- Responds in a timely manner to prepare all meals on time.
- Collaborates and works closely with other Marimn and Tribal departments.
- Interest in working with youth and staff on nutrition and cooking clubs as needed.
- Provides expertise on food safety and cooking etiquette.
- Plans and implements monthly menus according to USDA nutrition guidelines including meals that are both nutritious and culturally relevant to Native American students.
- Plans and implements meals that follow Healthy Habits guidelines.
- Provide feedback and input for 90-day/annual staff evaluations.
- Supports BGCA Manager with daily oversight of staff scheduling accuracy with an ability to coach staff on time and attendance/rotations in support of daily club activities/programming.
- Supports BGCA Manager with NOVAtime corrections by ensuring staff utilize timeclock system and request corrections in adherence with Marimn Time & Attendance Policy and Procedure.
- Assist BGCA Manager with staff scheduling and daily programming recommendations.
- Assists Boys & Girls Club Manager with Grants, working closely with Finance and Grant Department staff to ensure proper management and administration of grant funds, keeping Boys & Girls Club Manager abreast of programming/grant data adhering to reporting timelines.
- Familiar with and abides by grant procurement and other federal requirements as outlined in Notices of Award.
- Communicates and enforces all policies/procedures to all kitchen attendants.
- Responsible for all food preparation, cooking and serving, ensuring quality product delivery.
- Ensures programs and activities are culturally appropriate and that all children and participants are treated with Marimn Health policies and procedures.
- Willing to cross-train and fill-in where needed.
