TITLE: Food Service Director:
JOB OVERVIEW: The Food Service Director provides consistent on time quality meals to MarineLab students, maintains the kitchen at highest Department of Health standards, and oversees all cafeteria staff. The Director of Food Service is a Department Head and therefore an integral member of the MarineLab Operations Team. The Director is expected to manage the food service department in an efficient manner while following budgetary guidelines.

SUPERVISES: All cafeteria staff
RESPONSIBILITIES:
Food Prep/Cooking/Serving
- Supervises and participates in the preparation of meals, service of meals, and cleaning of kitchen and cafeteria after meals
- Assures compliance with Department of Health and all other guidelines
- Oversees planning menus according to established guidelines
- Assures all special diets are prepared according to standards
- Responsible for the proper handling, serving and storage of all foods
- Maintains, improves and monitors standards of sanitation in food handling and preparation.
- Responsible for the cleanliness of kitchen and all equipment
- Responsible for regular inventory of all food and supplies
- Orders and receives food items and supplies
Administrative/Managerial
- Supervises cafeteria staff, participates in determining staff needs, and provides training to food services staff
- Schedules staff to ensure full coverage of cafeteria services, including cleanliness and stocking
- Communicates food service program needs to SVP on as needed basis in regard to supplies, equipment, budget and any other issues
- Manages food service budget
MINIMUM QUALIFICATIONS:
- Experience coordinating food services (preferably in school/student setting)
- Familiar with Microsoft Office Suite, Google Suite, online communications (zoom, teams, etc.) and basic computer work
- Ability to effectively perform essential functions independently with minimal supervision
- Demonstrate an understanding, patient, warm, positive, and receptive attitude toward children.
- Ability to effectively prioritize time and responsibilities
- Must be physically capable of standing for long periods of time and lifting up to 30 lbs
- Must have personal vehicle that you are willing to use for last minute grocery needs (mileage is paid)
- Flexibility is a must
- Ability to communicate efficiently and effectively with coworkers
- Have or be able to obtain ServSafe Food Manager certification
WORKING CONDITIONS:
Over 5,000 participants visit MarineLab annually, most of which eat multiple meals in the cafeteria. We serve institutional food that provides energy, options, and fulfills most dietary restrictions. We serve up to 90 participants at a single meal. Visiting students are primarily aged 10-17 who use meal times to energize for their field trips and also as a time to relax and socialize with friends. They will be excited and talkative.
HOURS:
Breakfast is served between 7:30-8:15, lunch is served 11:45 – 12:30 PM and supper is served 5:45- 6:30 PM. The amount of prep work before each meal and clean up afterwards is variable but our meal shifts are generally 6:30 -9 for breakfast, 11-1:30 for lunch and 4-7:30 for supper. Which meals are served each day is variable upon needs of our student groups. Hours worked each day, therefore, will vary depending on what meals are being served, number of students on our property at any time, food deliveries that need to be accepted, administrative duties required on the day (scheduling, meal planning, hiring, team meetings), etc.
The hours worked per week vary widely throughout the year. Feb thru June is typically our busiest time of year; food service director can expect to work over 40 hours per week during this time. We are generally slowest in July-Aug and Dec-Feb with weekly hours often under 40 hours/week.
MarineLab is open and operational every day of the week, except for two weeks around the Christmas holidays
