What are the responsibilities and job description for the Cook II position at Mark Twain Casino?
Responsible in preparing food items needed for service. Makes and constant effort to improve working conditions and procedures to upgrade food quality. Is constantly aware of food inventories needed for service. The Cook II keeps the kitchen clean at all times. Clean as you go. Always maintains a good working relationship with all co-workers. The Cook II makes sure all food is properly covered, date marked, and storage according to Missouri Sanitation Standards.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Answers to the Executive Chef, Sous Chef, Kitchen Supervisor, and any F&B Supervisor and acts in charge in there absence of the kitchen.
- Set-up front line for service of the Menu (AM and PM shifts).
- Responsible for all par levels of food products and specialty food products to be used on the front line.
- Coordinates side work (sauces, garnishes, for the food being served, and other items that has to be ready according to the menu’s establish be the Executive Chef.
- The Cook II must be ready and able to fill in all work stations. (pantry, broiler, sandwich board , prep salads and hot entrees).
- Start-up and clean-up of all workstations. In other words, beginning and ending of each work shift.
- The Cook II does a lot of prepping for banquets, Winners Grill, and the Bistro.
- Follows all the State of Missouri Rules and regulation on Sanitation.
- Keep the kitchen in a clean and safe manner at all times.
- Knows and follows all Mark Twain Casino policies and procedures.
- Performs any other job asked by management.

EDUCATION and/or EXPERIENCE
CERTIFICATES, LICENSES, REGISTRATIONS
LANGUAGE SKILLS
Must be able to effectively communicate in English.
MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
COMPUTER SKILLS
Must have Microsoft Office experience and basic computer skills.
