The Assistant Dietary Manager works along side the Dietary Director to operate the daily operations of the department. This includes planning, purchasing, preparation, preservation, serving, and delivering residents their meals in compliance with all state and federal regulations. This position requires current CDM and CFPP certifications.

What you will do:
- Collaborate and supervise the procurement, preparation, presentation and delivery of food to residents in compliance with all state and federal regulations.
- Assist with recruiting, hiring, providing orientation/training, and retaining employees in the department.
- Coordinate menu planning that meets the nutritional needs of residents in accordance with recommended dietary allowance and state and federal regulations.
- Collaborate with the IDT in the care planning process for all residents and attend care conference meetings
- Schedule staff based on operational needs and workload requirements change.
- Assures food is prepared and served within scheduled time frames.
- Ensures food is received, stored, prepared, held and served under sanitary conditions.
- Inspects nutritional department regularly to ensure that it is safe and sanitary.
- Completes required forms and documents in accordance with company policy and state and/or federal regulations.
- Maintain the care and use of supplies, equipment, etc., and maintain the appearance of food service areas; must perform regular inspections of food service areas for sanitation, order, safety, and proper performance.
- Assists with obtaining food preferences from residents to promote quality food service.
- Provide an organized, quality dining experience for all residents of Maryville Nursing Home.
What you will need:
- High school diploma or equivalent.
- CDM and CFPP by ANFP, the Association of Nutrition and Foodservice Professional certifications are required.
- Two (2) year supervised food service experience in an institutional setting focusing on planning, preparing and servicing regular therapeutic diets.
- Ability to pass state required background screenings.
- Working knowledge of MDS 3.0 and resident care planning.
- Intermediate computer skills including the use of Microsoft Office suites program.
- Experience working in a healthcare setting.
- Associate Degree in Dietary Management, Science in Nutrition, Applied Nutrition, Dietetics and Nutritional Services or equivalent is preferred.
- ServSafe or related certification preferred.
- Working knowledge of food services practices and procedures as well as the laws, regulations and guidelines governing food services functions in nursing care facilities preferred.
Physical Requirements:
- Ability to stand for prolong periods.
- Ability to carry large or odd sized packages and equipment.
- Operating within an industrial style kitchen environment with a strong emphasis on safety and adherence to established protocols. Employee must have the ability to sit at a computer desk, reach above shoulders, squat, bend, twist, crawl, climb, stoop, see, speak, and hear.
- The role may occasionally lift or move items of up to 50 pounds.
