What are the responsibilities and job description for the Chef de Cuisine position at Mathews Yacht Club?
The Mathews Yacht Club, a private members-only Club, is seeking a Chef de Cuisine to take over the culinary operation and build a Team in our kitchen.
This position is a 5-day-a-week position Friday-Tuesday. We also have special events and weddings that provide additional creative opportunities. We seek an individual to join our team and prepare delicious and innovative meals for our members. Chef responsibilities include studying recipes, developing menus, and preparing high-quality dishes. You should be able to delegate tasks to kitchen staff to ensure meals are prepared promptly. You should be familiar with sanitation regulations. We want to meet you if you have experience with advanced cooking techniques and non-traditional ingredients. Ultimately, you'll prepare and deliver a complete menu that delights our members and guests. Salary will be based on experience and individuals qualifications.
Responsibilities
- Develop quarterly and seasonal menus
- Develop special menus for special and private events, including sit-down and buffet
- Set up the kitchen with cooking utensils and equipment, like knives, pans, and kitchen scales
- Study each recipe and gather all the necessary ingredients for mise-en-place
- Cook food promptly using our Kitchen Display
System to manage food delivery
- Delegate tasks to kitchen staff
- Inform wait staff about menu items and daily specials
- Ensure appealing plate presentation
- Supervise and develop kitchen staff and cook and assist as needed
- Slightly modify recipes to meet customers' needs and requests (e.g., reduce salt, remove dairy, gluten-free)
- Enter and manage recipes using Toast front-end and xtraCHEF
- Monitor food stock and place orders with our multiple purveyors
- Check the freshness of food and discard out-of-date items
- Experiment with recipes and suggest new ingredients
- Ensure compliance with all health and safety regulations within the kitchen area
- Perform inventory, manage food costs using Toast xtraCHEF, and prepare reports for the Club Manager and Rear Commodore.
- Sous vide experience a plus
Requirements
- Proven work experience as a Chef or Cook
- Hands-on experience with various kitchen equipment (e.g., grillers and pasta makers)
- Advanced knowledge of culinary, baking, and pastry techniques
- Leadership skills
- Ability to remain calm and undertake various tasks
- Excellent time management abilities
- Up-to-date knowledge of cooking techniques and recipes
- Familiarity with sanitation regulations
- Culinary school diploma preferred
- Valid Drivers License
- Dependable Transportation
