To assist in food preparation and service for Stella Maris and/or St. Elizabeth Hall.
Essential Functions
- Checks attendance against schedule and revises assignment sheet as necessary. Reads the menu before each meal. Checks tally sheets and stocks trayline accordingly.
- Assures that all menu items and serving utensils needed for tray line are available and adequate prior to start of tray line operation.
- Communicates any shortages or problems to Executive Chef or designee promptly.
- Monitors and documents food temperature at the start of the trayline.
- Prepares food for trayline, salad bar or cafeteria line according to assignment, following all department and sanitation procedures.
- Monitors and records temperatures for all refrigeration units and trayline foods.
- Prepares, loads, delivers, serves and retrieves trays (including Assisted Living Program) accurately and in a timely manner, following department procedures. Makes corrections/substitutions as needed. Cleans and sanitizes all assigned areas properly, including dining tables and chairs.
- Follows all food handling regulations, to include proper wrapping, labeling, dating, and storage of food.
- Maintains equipment and work area in a clean and sanitary manner, to include picking up, scraping, and washing soiled dishes, replenishing clean dishes, and removing trash. Cleans refrigerators, freezers, tray delivering carts, dish machine, trash cans, fryers, grills, coffee makers, etc. properly according to assigned schedule.
- Supervises the proper cleaning and sanitation of all support equipment, dishes, utensils, dining room tables, chairs, countertops, and floors in warewash area according to established procedures.
- Supervises work group, assuring that all department policies and procedures (to include safety, sanitation, and dress code) are adhered to, and that all scheduled assignments are followed and completed. Orients new employees to their duties and assists with on-the-job training.
- Prepares and posts daily assignment sheets, following established procedures to assure fairness.
- High school diploma or equivalent
- Minimum two (2) years experience
