What are the responsibilities and job description for the Director of Food Service position at MERRIMACK VALLEY YMCA?
General Function:
Responsible for the oversight of food service delivery at two seasonal, overnight camps on Lake Winnipesaukee’s Bear Island in Meredith, NH which includes nine weeks of full programming of meals and snacks for 400 daily resident campers and staff for the summer, as well as, food service administration for pre and post season, special programming and rentals. Oversee staff operations, budget management, inventory, purchasing and care of facilities. Ensure services are in compliance with nutritional, safety, sanitation and quality standards. Compliance must adhere to local, state, federal, American Camp Association, and YMCA regulatory requirements.
- Lawrence, Camp Nokomis, Family Camp, and pre and post season programs and rentals of all sizes
- Possess a broad knowledge of camp kitchen facilities, goals and objectives, risk management, programming and implementation techniques that help to create a fun, safe, and efficient environment
- Ability to perform general kitchen duties which include but are not limited to the following: trash removal, cleaning and sanitation of all kitchens and appliances, dish washing, pot washing, ordering, staff scheduling, etc.
- Ability to create and execute a healthy menu that will work for all, including vegetarians and people with food allergies.
- Assist Camp Directors in hiring kitchen personnel (including head cooks, cooks, kitchen assistants)
- Supervise kitchen personnel, volunteers, and vendors while on the island
- Monitor daily, weekly and monthly temperature logs for food, refrigeration, and dishwashing
- Possess mature judgment, sound decision making, and self motivation
- Maintain positive relationships with staff and campers
- Provide a safe environment for campers and staff
- React calmly and quickly in an emergency situation in accordance with camp policies and procedures
- Prevent accidents by maintaining constant observation, enforcing health and safety rules, and maintaining emergency readiness
- Respond to environmental and other safety hazards that relate to the camp program
- Oversee opening and closing the kitchens for the season

**Physical & Mental Demands:
- Must be able to lift/move food and supplies (Approx. 40 lbs.)
- Position requires the ability to walk around rough terrain.
- Able to stand/move without sitting for four to five hours at a time
- Able to handle all emergency situations that may arise
- A typical camp season for a food service manager is May through October, however the Camp Director will determine the schedule of the Food Service Manager
