What are the responsibilities and job description for the Coordinator - FNS Menus and Marketing position at Mesquite ISD?
- To be responsible for creating cycle menus, performing nutrient analysis, and testing recipes that meet the federal and state guidelines for the Food and Nutrition Services Department (FNS). Utilizing the software system, the Coordinator will be responsible for the nutrition analysis, assigning weekly menus, and production record creation. Overseeing the marketing of the FNS programs to students, parents and campus staff.
- Bachelor’s degree in Nutrition Sciences, Food & Nutrition, Dietetics or related field required.
- Certification as a Registered Dietitian required. RD/RDN eligible may be considered.
- ServeSafe Certification or equivalent.
- Knowledge of the National School Lunch Program (NSLP) and National School Breakfast Program (NSBP) state and federal regulations & policies.
- Experience in menu planning, standardized recipes and preparation for food service operations.
- Knowledge of industrial kitchen equipment, food production and HACCP principles.
- Knowledge of creating and implementing special diets for food allergies.
- A minimum of three (3) years of experience in food service operations, food preparation, kitchen management or an equivalent combination of education and experience.
- A minimum of one (1) year of experience in School Food Service or Child Nutrition Menu Planning.
- Design and develop quality recipes and cost-effective menus for preK-12th grade; Ensure all food served to students is compliant with USDA Child Nutrition Programs, the Texas Department of Agriculture, and Smart Snacks.
- Coordinate testing recipes and new menu items with Culinary Trainer.
- Conduct research on new food products; attends food shows and other vendor events.
- Measure customer satisfaction and participation with student’s surveys, analyze menu item performance measurement results, and adjust standard menu offerings accordingly.
- After testing of products is completed create new or revise recipes as needed.
- Collaborate with Culinary Trainer and Coordinator of Purchasing & Business with any menu develop as needed.
- Maintain nutrition analysis of all menus; execute menu adjustments to ensure compliance with nutrition standards that meet TDA/USDA regulations.
- Maintain PrimeroEdge software to ensure ingredients and recipes are accurate and correspond with the Food Buying Guide, recipe contribution, and HACCP standard operating procedures.
- Assists FNS managers and supervisors in choosing appropriate menu item substitutions in accordance with the USDA guidelines.
- Assist in bid specifications with Coordinator of Purchasing & Business to ensure good vendor relationships, compliance with contract requirements, and efficient utilization of purchased commodity products.
- Coordinate with the Culinary Trainer to test new products of interest and discontinue unpopular menu items prior to initiation of bid process for the following school year.
- Develop electronic food production records (FPRs) based on menu cycle(s) and deploy FPRs to campuses. Develop ordering guides to complement menus and software.
- Collect, organize and maintain Child Nutrition (CN) labels, product analysis, and/or nutrition fact labels for all food items purchased by the Food and Nutrition Department.
- Maintains Smart Snack compliance documentation on all purchased products. Work with campus staff to ensure food fundraisers are compliant with Smart Snacks regulations.
- Provides staff training related to nutrition and nutrition education.
- Oversee the creation of special menus for students by the Dietitian requiring medically required special diets. Communicates with cafeteria manager and parents as needed. Monitors for student acceptance. Works with the Coordinator of Purchasing & Business to obtain items needed for special diets. Enters special diets into PrimeroEdge and deploys to site production.
- Develop and organize a plan for emergency meals. Plan for the service of food during emergency situations.
- With the assistance of the Outreach & Marketing Specialist maintain records for all special diets /food allergies and sends current nutrition data for menu items to nurses, parents, and FNS Managers.
- Supervise Outreach & Marketing Specialist with development of effective marketing, promotional campaigns, and nutrition education for student and parent groups.
- Supervise Outreach & Marketing Specialist to update website and digital menu application with nutrition and allergen information as needed.
- Maintains nutrition information and menu posting on the MISD Food & Nutrition Services webpage.
- Assist with social media or other marketing assignments.
- Routinely visits district cafeterias to evaluate the quality of food, customer satisfaction, and menu acceptance.
- Supervise Outreach & Marketing Specialist in the creation of nutrition education materials for students. Works with cafeteria managers to use this information in the serving areas.
- Assist at campus cafeterias as needed.
- Responsible for keeping abreast of rapid changes of trends and advancements within the School Nutrition field and makes recommendations relative to them.
- Attend Region 10 and TASN training classes for updated policies and legislation and to reach and obtain/maintain SNS certification.
- Attains a minimum number of CE hours as required by TDA and to maintain RD/LD (or RDN/LDN) status.
- Demonstrates openness and willingness to improve the effectiveness of the department’s operations.
- Assists and supports the efforts of all Food and Nutrition Services staff with a positive attitude.
- Communicates a positive image of the department.

- Keeps FNS Assistant Director of Finance & Support Services or FNS Director informed about the affairs of the department.
- Completes at least twelve (12) hours of professional development training per year.
- Obtains and maintains Manager Certification or Serve Safe Certification.
