Job Description
Summary
This employee in this position is responsible for correctly operating all concentrate equipment in the production facility to provide high quality juice and purees at the required brix level.
Essential Duties and Responsibilities: Other duties may be assigned.
- Inspect pipes, pumps, valves, and equipment for readiness and cleanliness prior to startup.
- Install proper pipes, pumps, valves, and equipment for routing of juice from concentrator hold tank, through concentrating equipment and to correct finished product tank.
- Communicate with other plant personnel on tank volumes and potential timing of tanks being full or empty.
- Sanitize system prior to startup of concentrator.
- Fill cooling tower with water and prepare concentrator for drawing vacuum.
- Operates all equipment and controls to effectively obtain desired brix level of product by maintaining appropriate vacuum, temperatures, pressures, and flow rates.
- Maintain an adequate knowledge level of operation and control variations when concentrating different products.
- Maintain proper balance of juice in all phases of the concentrating operation to maximize efficiency of operation and minimize hold time of juice in plant.
- Maintain appropriate juice flow rate into concentrators to assure quality and desire brix level for each product.
- Inspect product in finished product tank to assure desired quality attributes, proper juice level, and lack of foreign substances.
- Cool product after concentrating by correct use of cooling votators, flash cooler, and or plate and frame chiller.
- Pump finished product at appropriate brix level and temperature to designated finished product tank.
- Prepare essence drums for filling by lining drums, labeling of specified and attaching MSDS sheets.
- Strip essence from juice at the appropriate fold and return to juice or pack into drums as required.
- Shutdown concentrator when concentrating is completed and flush juice to finished product tank with water.
- Operate concentrators in an emergency shutdown situation to maintain desired product quality and prevent burning of product in system.
- Remove burned juice particles from stripper by pushing rod brushes through stripper holes.
- Handle chemicals with proper safety equipment and have a working knowledge of MSDS sheet information for chemical use.
- Clear concentrator with proper type and amount of chemicals for the necessary time to effectively clean all equipment.
- Fill out maintenance request forms and communicate properly to assure proper operation and maintenance of equipment.
- May assist in the training of plant employees to qualify as a Concentrator Operator.
- Maintain work area in a clean and orderly manner.
- Adhere to plant safety and GMP policies.

Education and/or Experience
High school diploma or general education degree (GED); sufficient experience in the Bracket IV processing positions to qualify.
Language Skills: Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to effectively present information on a one-on-one basis to other employees of the organization.
Mathematical Skills: Ability to add and subtract two-digit numbers and to multiply and divide with 10’s and 100’s. Ability to perform these operations uses units of weight measurement, volume and distance. Ability to calculate figures and amounts such as proportions percentages, area, and volume.
Reasoning Ability: Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardization situations.
