Overview — What You’ll Do
This role covers kabob grill cook, line cook, and dishwasher duties. Flexibility is key — we all pitch in wherever needed.
We’ll start you as a line cook and dishwasher, while training you to work the grill. Our goal is for everyone to know every position, so the whole team can jump in wherever needed and keep the kitchen running smoothly.
- Grill chicken, beef, pork, and lamb kabobs over an open flame to perfection.
- Handle proteins marinated in traditional Armenian and Egyptian family recipes.
- Manage tickets and keep food coming out on time.
- Keep the grill station clean, stocked, and organized.
- Monitor grill temperatures and follow all food safety protocols.
- Prep fresh salads and make house vinaigrettes.
- Plate salads and entrees with consistency and attention to detail.
- Skewer meats, poultry, and vegetables for grilling — following traditional techniques.
- Keep prep stations fully stocked and ready for service.
- Wash and sanitize skewers, dishes, pots, pans, and tools.
- Keep dish area clean and organized.
- Assist with general cleaning and kitchen upkeep throughout the shift.
Health & Safety
- California Food Handler’s Card required.
- Follow all food safety protocols, including proper storage, labeling, and time/temperature controls.
Work Environment
- On your feet all shift — standing, walking, bending, reaching.
- Regularly lift up to 35 lbs (heavier items with help).
- Work directly over a hot open flame grill (600-700°F) for extended periods.
- Occasionally work near cold storage.
- Fast-paced, high-energy kitchen with constant team communication.
- Moderate noise from equipment and team conversations.
- Occasionally interact directly with guests.
