Job Overview
We are seeking a passionate and skilled Baker to join our team. The ideal candidate will works under the supervision of the Pastry Chef in all matters concerning pastries, breads, desserts, cakes, and other relative confections served to respective dining outlets and banquets. Prepares all baked goods, including bread and pastries and desserts while presented precisely and consistently. Assists in managing overall operations of the pastry department including food production, inventory, vendor ordering, menu planning, food production, and supervision of pastry cooks.
Responsibilities
- Assesses daily bakery needs with Pastry Chef and/or Executive Chef.
- Consults with Pastry Chef concerning the daily production needs, parties, menus, and pastry department operations.
- Reviews bakery needs for special events in conjunction with the Pastry Chef and/or Executive Chef as they occur.
- Assists Pastry Chef in supervision of pastry cooks, scheduling, and oversight of daily operations.
- Has effective communication with all members of the restaurant, kitchen, and banquet staff.
- Is constantly aware of the food inventories within the standard specifications; ensures that food requisitioning is kept within the appropriate set policies.
- Responsible for food production being kept within set quality standards.
- Has experience and knowledge with using commercial kitchen equipment and machines such as ovens, stand mixers, emersion blenders, and other table-top kitchen appliances.
- Maintains a complete day-to-day knowledge of menus, preparation, and presentation.
- Supervises special bake shop orders including decorated cakes.
- Produces artistically presented, high-quality, and original foods including breads, cookies, plated desserts, wedding/specialty cakes, chocolates, showpieces, and other confectionaries that require skillful preparation.
- Presents him/herself in the most professional manner at all times showing his/her leadership and self-control and works towards a common goal within the food and beverage operation.
- Maintains the ability to fulfill all member requests.
- Demonstrates the ability to effectively write and cost recipes, conduct inventory, and assemble food cost/inventory summaries.
- Effectively manages banquet event order preparation and execution.
- Executes dessert line orders in and organized and timely manner
- Submits ideas and suggestions for future goals and operational improvements to the Executive Chef.
- Maintains a safe, organized and clean kitchen at all times.
- Cleans and sanitizes equipment and work station
- Manages dating, labeling and covering in walk-in coolers and freezers.
- Notifies Pastry Chef in advance of expected product shortages.
- Maintains safety and security in workstation.
- Performs material handling tasks, which may require bending, stooping and lifting at least 25 pounds of weight.
- Performs other appropriate tasks as assigned.
Job Qualifications
- Good attitude and highly motivated self-starter.
- High School diploma or equivalent.
- Must be able to handle stress in a healthy and professional manner.
- Must be able to complete tasks in an accurate and timely manner.
- Knowledge of and ability to use dishwasher and other kitchen equipment.
- Knowledge of and ability to perform required role in emergency situations.
- Able to meet and perform the physical requirements and to work effectively in an environment which is typical of this position.
- May need to use some protective equipment, such as non-slip shoes, apron, hat, etc..
Licenses and Special Requirements
- Food safety certification.
Physical Requirements
- Must be able to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.
- Must be able to continuous repetitive motions.
- Must be able to occasionally lift and/or move up to 50 pounds.
- Must be able to work in a busy, noisy environment.
- Must be able to handle working conditions which may be cold, hot, humid, wet/slippery.
- Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
