Job Overview
Miramont Country Club is seeking a skilled and versatile Chef de Tournant to support our culinary team by rotating through various kitchen stations. The ideal candidate will have a well-rounded culinary background and the ability to adapt quickly to different cooking techniques and station responsibilities. This role plays a key part in maintaining kitchen efficiency and ensuring consistency in food quality and presentation.

Responsibilities

  • Rotates through all kitchen stations, providing support wherever needed to maintain high-quality food preparation and service while monitoring and maintaining food quality, ensuring consistency across all stations.
  • Ensures the efficient operation of the grill station and maintains high-quality food preparation.
  • Supervises and trains kitchen staff in portioning, cooking methods, and adherence to recipes.
  • Plans ahead and establishes a well-organized mise en place for smooth kitchen operations.
  • Provides guidance on advanced cooking techniques and fine culinary details.
  • Implements standard operating procedures, cooking techniques, and kitchen best practices.
  • Collaborates with Sous Chefs to create and execute daily Chef’s specials.
  • Develops and curates Member’s specials for Wednesday and Friday dining.
  • Trains and mentors junior kitchen staff to enhance their culinary skills and efficiency.
  • Oversees portioning of meat and fish, ensuring consistency and proper storage.
  • Communicates daily with the Chef regarding seafood inventory and ordering needs.
  • Organizes and conducts meetings with line cooks and front-of-house staff regarding Chef’s specials.
  • Maintains cleanliness and organization of all refrigeration units and storage areas.
  • Promotes and enforces strong sanitation practices within the kitchen.
  • Ensures thorough cleaning procedures are followed at the end of each shift.
  • Completes and maintains daily temperature logs and sanitation records.
  • Assists in banquet and special event preparation, ensuring smooth execution of large-scale meals.
  • Collaborates with front-of-house staff to ensure seamless communication and service.
  • Assumes leadership of the kitchen in the absence of the Sous Chef.
  • Demonstrates proficiency in all savory line stations and the ability to work any station for both lunch and dinner shifts.
  • Assists Sous Chefs with daily inventory management and ordering.
  • Ensures adherence to scheduled cleaning routines and kitchen hygiene protocols.
  • Upholds the club’s mission, vision, and values while fostering a positive kitchen environment.
  • Performs additional tasks and responsibilities as assigned by the Executive Chef and Sous Chefs.

Qualifications

  • Good attitude and highly motivated self-starter.
  • High School diploma or equivalent.
  • Proven experience as a Chef de Cuisine, Executive Chef, or similar leadership role in a high-end restaurant, hotel, or Country Club.
  • Degree or certification in Culinary Arts or a related field preferred.
  • Strong leadership, organizational, and communication skills.
  • Ability to work flexible hours, including weekends and holidays.
  • Must be able to handle stress in a healthy and professional manner.
  • Must be able to complete tasks in an accurate and timely manner.
  • Knowledge of and ability to use dishwasher and other kitchen equipment.
  • Knowledge of and ability to perform required role in emergency situations.
  • Able to meet and perform the physical requirements and to work effectively in an environment which is typical of this position.

Licenses and Special Requirements

  • Food safety certification.

Physical Requirements

  • Must be able to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.
  • Must be able to continuous repetitive motions.
  • Must be able to occasionally lift and/or move up to 50 pounds.
  • Must be able to work in a busy, noisy environment.
  • Must be able to handle working conditions which may be cold, hot, humid, wet/slippery.
  • Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and ability to adjust focus.
