Overview
Since opening our dinner service in January, we’ve received an overwhelming response from our community and have been fully booked nearly every day! We are growing much faster than anticipated, and now we’re looking for a talented Head Chef to lead our kitchen operations and team to take us to the next level.
With many exciting ideas in store, we’re seeking someone who can transform our vision into reality and help us share Korean culture and cuisine with the city of Chicago. Experience with Korean cuisine is strongly preferred, but not required.
Responsibilities:
1. Kitchen Management
- Staff Training & Supervision: Develop training programs for new hires, covering cooking techniques, equipment use, and food safety. Offer ongoing training and encourage teamwork to maintain a positive work environment.
- Workflow Optimization: Analyze and streamline kitchen operations for better efficiency, including prep processes, kitchen layout, and equipment usage during peak times.
- Scheduling: Create staff schedules to balance peak times and labor costs, adjusting as needed for busy periods.
2. Food Quality & Presentation
- Standards Maintenance: Set and reinforce quality standards for taste and presentation. Conduct regular tastings and inspections to ensure consistency.
- Tasting & Feedback: Encourage feedback from kitchen and FOH staff on dish improvements, fostering innovation and ownership of culinary creations.
3. Inventory & Ordering
- Stock Management: Keep accurate inventory records, assess stock levels, and implement an efficient ordering process based on menu needs and events.
- Waste Control: Analyze waste to reduce spoilage and preparation waste. Ensure proper ordering, receiving, and storage of ingredients.
4. Compliance & Safety
- Health & Safety Regulations: Stay updated on health regulations, ensuring compliance through regular checks and staff training.
- Sanitation Standards: Implement and lead a cleaning schedule, emphasizing the importance of proper sanitation practices.
5. Financial Management
- Budgeting: Collaborate on budgeting for food, labor, and overhead costs. Regularly assess financial performance and adjust as needed.
- Sales Analysis: Review sales data to identify top and low-performing items, guiding menu adjustments.
- Cost Control: Monitor food costs, pricing, and portion sizes to ensure profitability while maintaining appealing menu offerings.
6. Collaboration with Front-of-House
- Communication with Service Staff: Maintain clear communication with FOH staff about menu changes and specials. Regularly update them on the menu to enhance service.
- Customer Interaction: Engage with guests to gather feedback and strengthen customer loyalty.
7. Creativity & Innovation
- Culinary Trends: Stay updated on trends, encouraging staff to bring new ideas to the menu.
- Experimental Dishes: Hold test nights for staff to present new dishes, gathering feedback for evaluation.
- Special Events & Promotions: Develop unique menu offerings for special events, working with event planners for cohesive experiences.
8. Crisis Management
- Problem-Solving: Create protocols for common kitchen issues, training staff to stay calm and solve problems effectively.
- Staff Conflicts: Act as a mediator in conflicts, fostering open communication and team-building exercises.
