Position Overview
The QA Technician at our manufacturing facilities is an on-hands leader of Quality, and an initiator with the
ability to identify possible food safety risks in the meat production chain to assure the delivery of safe meat
products to our valuable customers.
Specific Responsibilities
Ensures daily that all QA policies and procedures are followed at Mitty’s manufacturing facility as part
of Mitty’s Quality/Food Safety Program.
Leads the maintenance of HACCP, GMP’s, SSOP’s, SOP’s, pre-requisite programs, and record forms to
meet the highest Food Safety/Quality Assurance standards.
Responsible for monitoring the micro finished product program and assuring the implementation of the
Hold/Release policy.
Coordinates with the QA Manager the daily release of finished products to the market, and when
necessary, the destruction of finished products
Act as a liaison with outside lab to ensure timeliness of samples’ schedules and results
Performs/coordinates the sampling for the compliance of the Monthly Environmental program and water
test according to company procedures
Conducts daily pre-operational plant inspection and ATP swabbing to authorize or not the start up of
processing operations
Execute daily and weekly analyses of data (i.e. micro, weights, scraps, etc.)
Escorts Pest Control Technician, State/USDA inspector, and 3 rd Party Food Safety consultants in the
plant during the inspections and perform necessary follow up with Plant Management.
Monitors daily and through the day that employees follow Good Manufacturing Practices (GMPs) and
informs plant management when corrective actions are required
Monitors daily and through the day the compliance of all raw materials, packaging materials, products in
process, and finished products according to Mitty’s specifications
Responsible for training new and existing employees in GMPs, HACCP, Pre-requisites programs, QA
procedures, and in filling correctly all Mitty’s QA and Production forms used for process control.
Assures the compliance of Finished Products’ SOP’s within Mitty’s QC Specs. Informs Plant
Manager/QA Manager when out of range
Investigates along with QA Manager Customer complaints and identifies possible CCP’s.
Performs daily sensory evaluations along with QA Manager/Production Personnel according to
company procedures
Works continuously with Plant Operations and QA Manager to improve yields, efficiencies, product
quality, and minimize product waste

Job Requirements
High School diploma or associate’s degree.
HACCP certified.
PCQI preferred.
Self-motivated, able to take initiative and use sound judgment in day-to-day decision making.
Professional, courteous, reliable, and mature, with outstanding organizational and communication skills-
fluent in reading and writing English.
Clear understanding of GMP’s, HACCP and Sanitation Standards covering the (USDA) meat industry.
Food production experience preferred.
Flexible and able to work with others as a team.
Punctual and reliable in work attendance.
Able to effectively analyze problems and develop solutions.
Proficient with Microsoft Office software, particularly Excel, and possess solid general computer, math,
and analysis skills.
