Position Summary:
The Director of Restaurants [DOR], in collaboration with the Director of Food & Beverage, is responsible for providing support to Restaurant General Manager(s) in day-to-day operations and overall success of our dining outlets. The position will directly manage Restaurant General Manager(s). The DOR will work closely with the Restaurant General Manager(s), Chef de Cuisine(s), Culinary Director, Director of Events, and Director of Food & Beverage to manage daily operations within budgeted guidelines and to the highest standard. This role will also function to build and preserve strong relationships across departments at Moonlight Basin.
Primary Job Duties:
- Provide mentorship and operational support to General Manager(s).
- Work with department scheduling managers to ensure all restaurant operations are adequately staffed with proper consideration to budgeted guidelines and anticipated business levels.
- Ensure payroll reports are submitted to appropriate departments correctly and in a timely fashion.
- Actively assist in the recruitment, interview, and hiring process of all F&B restaurant associates and managers.
- Collaborate with other departments to ensure their F&B needs are met.
- Engage with Events department to coordinate overall F&B participation in special and member events, including but not limited to assistance with scheduling, set up, execution, and breakdown.
- Oversee all departmental staff communication to ensure that information is efficiently accessed by all.
- Support General Manager(s) to maintain an appropriate product inventory for all outlets, adjusting to budgeted guidelines and business levels. Ensure that invoices are properly coded.
- Support day-to-day restaurant operations by being an active presence on the floor, including working MOD shifts.
- Create and maintain strong relationships with our members and guests.
- Gather member and guest feedback to address service wins and opportunities with General Manager(s) and implement operational changes and/or service standard changes when necessary.
- Assist General Manager(s) with restaurant vision and implementation of seasonal decor and ambience.
- Ensure all restaurant team members stay actively engaged with our company culture initiatives.
- Other duties as assigned by the Director of Food & Beverage
Qualifications:
- Minimum of 5 years hospitality management experience. Prior experience in a luxury hotel or private club preferred.
- Extensive knowledge of wine and beverage. WSET and/or CMS certifications preferred.
- College degree preferred.
- Precise attention to detail.
- Able to manage and prioritize multiple tasks.
- Self-motivated to meet deadlines, manage priorities, communicates challenges, and work with minimal supervision in a fast-paced environment.
- Excellent people skills.
- Exceptional guest recovery skills.
- Excellent organizational and time management skills.
- Strong knowledge of MS Office, including Word, Excel, PowerPoint, Outlook and Teams.
- Knowledge of JONAS point-of-sale preferred.

- Must be dependable, available and flexible to work all shifts based on business demands. This includes working on weekends, days, nights and/or holidays based on business demands.

Expected Hours of Work
- Punctuality and regular attendance required.
- Must be available to work all shifts (days and evenings), weekends and holidays.
Physical Demands:
Position requires walking and standing most of the working day; must be able to stand and exert well-paced mobility for up to 12 hours in length. Must be able to bend, stoop, squat and stretch to fulfill tasks. Requires manual dexterity, grasping, writing, standing, sitting, walking, repetitive motions, bending, and climbing.
